Title: Blue Cheese and Herb Compound Butter over a hot grilled steak
Post by: Sunshine on March 27, 2014, 09:18:42 AM
Simply the best - I don't know why I often forget how a simple compound butter can transform a simple grilled, pan seared or baked meat.  Before I went FTS I used these all the time and know I get to enjoy guilt free!  Just use what you have - sometimes you'll find a magical combination!!!!  I've even used finely ground nuts to give a little crunch!

I had some compound fresh rosemary and thyme butter in the freezer that I thawed to use to rub my chicken down before roasting.  Then I used the rest of the butter to make a sauce from the pan drippings - another great use!  Splash of wine., heavy cream or chix stock to deglaze the pan - let it reduce and stir in leftover butter! Yum!

I haven't ever grown lavender.  I only have it as an extract.  Would it work or taste kind of weird?  I ask because I haven't had the herb fresh.
