Fat To Skinny

Serves 1
Ingredients:
1/3 cup Canned Corned Beef, diced
1/2 cup diced cauliflower
1 Tbsp diced onion
1 Tbsp diced bell pepper
2 eggs
Cooking spray
1. Cook diced cauliflower in small saucepan until slightly softened, about 3 minutes.
2. While cauliflower cooks, saute onion a minute or two in cooking spray in skillet over medium heat; add bell pepper dice, saute another minute or two, till slightly softened.
3. Add corned beef dice, continue to saute.
4. Add cauliflower dice, continue to saute
5. While hash sautes, poach two eggs.
6. Serve eggs on top of hash.
I find this very tasty and satisfying. The cauliflower is a substitute for the potato in regular corned beef hash. I use Walden Farms calorie free Ketchup on it.
6 grams carbohydrate, 2.5 grams fiber; 3.5 grams net carbohydrate

I contend that cauliflower is a magical veggie!... So much can be done with it that defy the taste buds!

My dads family is from Scotland ;) Thats where the long hair comes from.Corned beef is taken very seriously in my family.Doug is from Boston and they really take it seriously! You always have to buy a big enough one to have hash the next day!I really like the hash with the cabbage and onion.Wicked good! :)
