Title: Cauliflower Corned Beef Hash and Poached Eggs
Post by: Enjah on April 08, 2012, 11:41:52 AM
Serves 1

Ingredients:
1/3 cup Canned Corned Beef, diced
1/2 cup diced cauliflower
1 Tbsp diced onion
1 Tbsp diced bell pepper
2 eggs
Cooking  spray

1. Cook diced cauliflower in small saucepan until slightly softened, about 3 minutes.
2. While cauliflower cooks, saute onion a minute or two in cooking spray in skillet over medium heat; add bell pepper dice, saute another minute or two, till slightly softened.
3. Add corned beef dice, continue to saute.
4. Add cauliflower dice, continue to saute
5. While hash sautes, poach two eggs.
6. Serve eggs on top of hash.

I find this very tasty and satisfying. The cauliflower is a substitute for the potato in regular corned beef hash. I use Walden Farms calorie free Ketchup on it.

I'll add my welcome, Enjah.  Come visit often.

My Irish mother is smiling down on us.  She took her corned beef very seriously.
