   ½ teaspoon cayenne pepper
   Salt and pepper
   1 teaspoon butter
   2 large eggs (2 net carbs)
   ½ cup shredded white cheddar cheese
   2 tablespoon low-sugar salsa (1 net carb)
   1 tablespoon sour cream (optional) (.5 net carb)

Directions

1.   Pan-fry the ground beef in the olive oil and season with cumin, cayenne and salt and pepper. Taste for personal preference and add additional seasoning as required.

3.   Melt the butter in a nonstick skillet over medium heat.
4.   Pour 2 well beaten eggs into the pan and cover.

Oh yum! This makes me hungry just looking at it. I'm going to make this for dinner and let the kids have tortillas. I think a tiny side of shredded lettuce and an avocado slice would be nice with it, too.....

Hi Alicia! :)

Are you saying your going to serve tortillas to your kids but deny yourself?

If you like tortillas, I have great news for you... There are low carb options out there that are FTS-friendly.
Here are a few that I especially enjoy...

La Tortilla High Fiber Tortillas

Joseph's Reduced Carb/Flax, Oat Bran & Whole Wheat Tortillas

Hi Marty! :)

When looking at a product label, first check the "reported" carb counts.

If they look OK, then look at the ingredients list.
If ANY of the first (top) three ingredients is high carb, DON'T buy the product!

You are likely eating far more carbs that the label would lead you to believe.
This is because the FDA is not very fussy about accuracy in carb counts.

You've come across a product with misleading carb content labeling.
The top two ingredients are both sources of HIGH net carbs (sugar):

Whole wheat flour
Enriched bleached (wheat and barley) flours

So I say nix these tortillas.
