Post by: LEESE on May 23, 2010, 09:01:54 PM
OK so I can replace my flour in a recipe I'm looking at for the pork rinds but it also calls for corn meal .

any suggestions?
or maybe just leave it out all together ?

Flour
(1 Tbsp)
11.5g
3 tsp sugar
Cornmeal
(1 Tbsp)
10.6g
2 ½ tsp sugar
That's more than 20 carbs for the whole day on some chicken drumsticks.

Is the coating necessary? If it is mix soy flour 50/50 with ground pork rinds. When doug makes hooters chicken wings he uses tabasco and butter and no coating.

I think the 50/50 soy flour and pork rinds will work just fine Leese. If you want the  cornmeal the only cornmeal i have ever found that is truly low sugar is dixie diner corn muffin mix.You can use that right out of the bag like cornmeal. If you get on his email list bob will send you his wekly specials like free shipping 25 % off, etc.Try experimenting alittle you may find something you like.Let me know how it turns out my friend.
