yep. This. I use guar all the time without a problem. Thought about buying xanthan to try next but now I won't.

Mmm.. yep you're right. They're really good. I made them with Doug's dill mayo. It sorta reminds me of tarter sauce only better. Next time I'll do them with salmon.

For a few months now I've been making what I call Guacamole Salad. I was craving guacamole and threw thus together instead of cooking a whole spread to have some guac with. I'm not a measuring kinda cook, so use these ingredients to your personal taste.

Layer salad stuff:

Romaine lettuce
Chopped tomato
Avocado chunks
jalapeno slices
red onion
Cucumber slices
Hard boiled egg

Dressing:

Juice of 1 lime with
2 parts Evoo
chopped cilantro
Crushed red pepper
minced garlic
Penzeys Arizona Dreaming seasoning or your favorite mix of southwestern type spices (cumin, chili powder, etc.) Or even a tsp of taco seasoning instead.

I briefly whizzed the dressing ingredients in the magic bullet, or you can use a whisk. This salad was so scrumptious. I often have it for breakfast.

So far I've tried Zero in coffee, koolaid and 1 baked dessert. It doesn't seem very sweet to me. It was fine in my coffee because I don't like it very sweet. But in the others, not so. Now, I'm betting this is because I eat so many supersweet things that my taste buds may be desensitized to the taste of sweet. It won't go to waste though. Probably I should go without anything sweet for a while and then test it out again.

ItsOverSugar...im glad you like it!!  ;D Key think to making a perfect omelet is 1) Make sure your pan is large enough for the egg to spread and 2) make sure you put enough butter to coat the bottom of pan and 3) Don't be afraid to take it off the heat if egg is cooking too fast. .. and Im gonna need the kids to eat some mushrooms...lol j/k Im glad you liked it though.
Good tips! Next time I make this, I'll try them. Yeah, I need my kids to eat mushrooms too! They like veggies, but some I just cannot get them to eat no matter what. I have little cavemen who would only eat meat if I let them. So I use a lot of (sneaky) ways to get them to eat their veggies, and it usually works except for the ones they think are super yuck .. like broccoli, cauliflower, mushrooms. It just doesn't work! LOL One of these days, I'll trick them for sure! ;D

I would love a soy based, very low carb, wheat free wrap or bread substitute. I've decided to give up wheat completely and I can't find any LC bread substitutes that don't contain wheat.  It would also be lovely to have premade meals, like lean cuisines, that I could just grab. There are a few out there, such as LC chili, but the wraps would make life much easier.
This. About 10 years ago you could buy low carb frozen meals at the grocery. At least you could in my area. I remember buying them, but they weren't available for long. It would be great to be able to have a convenience like that again.
