Caulimash Potatoes

I love caulimash and prepare it everyway I made potatoes in the past.My latest thing is adding leftover cheeseball to the food processor.It changes the consistency and adds alot of flavor. Feta/cheddar cheeseball is also very good because its salty. ;) Doug steamed the cauliflower last night with the outer leaves and we used them as scoops for the caulimash :)

A little help/advice please.  I made cauli mash tonight for dinner.  Steamed the cauli, added a little butter, mayo, s & p, and used a hand blender.  It just seems more a puree because it was not exactly on the runny side but not exactly thick either.  I threw in a handful of grated cheese which helped a bit, but still seemed on the puree side.  By steaming does it seem to absorb more water perhaps?  Next time I make it is it worthwhile adding a little thickner maybe (hopefully not aiming for cauli jello like my gravy)?  Thanks.

Cauliflower seems to grab up that liquid Morgan.  I wonder if maybe you didn't get all of it out before adding it in??  I sometimes dump it out on a papper towel to soak it up or even put it in a salad spinner to be sure it is drained as much as possible.  I don't care for my cauli-mash to be runny  :P

Hi Morgan, don't cook it as long and pat with paper towels prior to processing.  ;)

I like to roast the cauliflower in the oven as opposed to steaming.  That helps a bunch with the dryer consistency.  Then I add a few cloves of roasted garlic while in the food processor...yum!
