Feel free to add different vegetables into the mix!
Ingredients
* 1 (15 ounce) can artichoke hearts, drained and chopped
* 3/4 cup grated Parmesan cheese
* 3/4 cup mayonnaise
* 1 pinch garlic pepper
* 4 skinless, boneless chicken breast halves
Directions
1. Preheat oven to 375 degrees F (190 degrees C).
2. In a medium bowl, mix together the artichoke hearts, Parmesan cheese, mayonnaise, and garlic pepper. Place chicken in a greased baking dish, and cover evenly with artichoke mixture.
3. Bake, uncovered, for 30 minutes in the preheated oven, or until chicken is no longer pink in the center and juices run clear.

I have never had a artichoke is it like any other veggie ? What is the taste and texture close to ? If it is close to mushrooms I dont like ;D

Thats a good question.I like the ones packed in olive oil.The only thing that comes to mind is heart of palm which isn't 100% accurate.Not spongy like mushrooms ;) Did that help? :-[

The taste of artichokes is VERY unique and I can't think of anything that tastes quite like them.
I suggest you buy a small jar of marinated artichoke hearts (or plain canned ones) at the grocery store and try them out.
Remember... Read the nutrition labels!
Canned and marinated artichokes are both precooked and ready to eat.
I occasionally enjoy marinated artichoke hearts with GG Bran Crisp crackers and cream cheese... YUM!!! ;D

That sounds amazing...except the GG crisp crackers, since I have yet to try it. I need to order some :)

If you haven't tried this recipe for Artichoke Chicken yet, I reccommend that you do. I made it last night and it was great. So tasty and the chicken was so juicy. The whole family loved it!! I spread the mixture over 6 chicken breasts. It was so easy. Even those that say they can't cook could do this.

Rena, just go by the carb count on the can or jar. I am making this for dinner tonight also. My family loves it!

LOL ShihTzuMom -- I was just coming back here to edit my post.
I checked Doug's book and it says 2 per half cup. Thing is, I don't have any artichokes in the house, so I couldn't check 'mine' until Rick brings them home after work. LOL! Sounds great, so we'll give it a try tonight. :)

BTW Rena, I cooked it for 45 minutes to be sure the chicken was cooked. With the topping on it, it didn't dry out.
