My Dear Miss UMPA,

    With great appreciation and a rather full tummy, I have just finished a very
wonderful bowl of homemade chili using Eden Organic Black Soy Beans as you instructed
in your past post here. They were wonderful, I will be incorporated them into other meals
in the future. It is nice to a least have a bean back in my meal plans without the worry
of carb count.

    Thanks again young lady, you are a prize in my book to us all.

I read about buttermilk in Dana Carpender's "500 Low Carb Recipes" long before I found FTS
here is the exert from I used to make my decision to continue making Buttermilk Fried Chicken::

"In Dana Carpender's cookbook 500 Low Carb Recipes it says that the authors of GO-Diet (two doctors) did research and found that most of the lactose in plain yogurt and buttermilk is converted into lactic acid by the bacteria. That gives it it's sour taste. The 12 grams per cup of carbs on the label should actually be counted as 4 grams per cup for this reason. Dana says that she now counts plain yogurt and buttermilk this way and hasn't had any weight gain or craving triggers from it.
Also, buttermilk has 8 grams of protein per cup too! Just a little FYI!""

This makes sense to me. I have never had a spike after eating chicken cooked this way. Just
plain old method , but low carb meal or CarbQuik. Haven't tried Dougs bacon rinds yet but they
should work just as well if not better, I would think.

I'm cheap, instead of buttermilk fried chicken I just do the wings. Sometimes when
I'm feeling real cheap I just to the wing tips. (ROTFLOL). Y'all done gone and messed
me up now. I was happy eating chicken, hamburger patties and scrambled eggs now
I have to make decisions what to try next.

Girls love it, ya ever seen a Peke dance for a snack, she is a real card and a chow hound
to boot.

What's this I hear about another new cookbook coming out soon ??

Publix is special ordering me some of the Eden Black Soy Beans .

They(Publix) will call me with price and availability. Let U know
what they say. They are available at WholeFoods in Jacksonville
well not now I bougth the last three cans. They will re-order them
for customers also they say.

Gonna make Palatka Chili tomorrow, buttermilk wings today.

Let's not forget the words "Stabilized and/or Arrested", my VA podiatrist watches me
like a hawk. His opinion is my neuropathy has been stabilized, it will never get better.
However it need not get worse, with a proper diet and the foot care.

I still hold out hope that nerves can be re-generated some day.

For now the FTS LifeStyle is the best way to hold this condition at bay.

Let me tell ya about kitchen cleanup. If you are a VET , you have been
at some time on the business end of a dishpan brush and rag.

I am of the firm opinion ever man (No disrespect here,ladies) needs to spend
at least a summer in the chow hall of the US Military.

1. He will respect his momma , one heck of a lot more
2. He will understand groceries are cooked not handed out of a drive-in window
3. Good food needs good cooking
4. Either you clean it up or you don't eat your next meal it is provided on (Clothes-line security detail instead)
5. He will never believe again cooking is just woman's work (goes with #1)
6. He will lose 25 lbs or more and always say "My momma never treated me this way". (Goes with #1)

Oh well this is my two cents worth, I welcome yours
remember a lot of good men and women fought and died
to see you have the right to have your two cents worth respected.

    No Daytona 500
    No Fishin

Look at the radar for Palatka Florida , we are just a little west northwest of Daytona Beach

However the lakes around here are loving the rain and it will be great for fishin when
it clears.

I was forced to cook myself a large T-Bone to ease the pain, looks bad today also for the
500 to get started though. Might have to cruise downtown to Angel's Dinner and jawbone
with the fellars.

I told Princess to do the dishes last night,
she rolled over wanted a belly rub and made the
bark for I have a headache right now. Who
would have known.

Every cleanup tip or non-destructive(Yep right word)

Miss Toosweet,

     You are 100% correct there seems to be a difference in the
carb counts even between their website and the can I am currently
holding in my hand. I even got out my magnifying glass to zero
in on the numbers on the can::

Here they are reading right off the can::

Total Carbohyrates ==10grams
Total Fiber=6 grams

If this holds true it would be great however when in doubt, find out
I'll be calling and/or emailing for the correct amounts as soon as they
open in California tomorrow.

Hold your breathe GRITS might make a comeback.

If not well I bought one can for testing only.

Ask Umpa / Southern Style GRITS with a twist

Miss UMPA,

     This morning I had GRITS,eggs and bacon for breakfast REALLY.

     From another blog I got this product and brought a can home.

     Juanita's Foods "Mexican Style Hominy"

This is what I did::

1. Drained the liquid out into a strainer.
2. Placed the hominy on paper towels and patted them dry as possible
3. Into oven at 200 deg. for 15 minutes to further dry them out.
4. Into food processor , pulsing until near consistence of grits
5. pan fried half half cup with Tsp bacon grease, butter, salt and pepper.
6. Mixed half cup hominy and boiling water to cover, then add the
    same fixings from above.

Pan fried close but no ring.
Boiled closer.

If you did the Southern Fried egg trick (Over easy on top of a pile
of grits and cut up, you know the fried egg/grits yellow plate breakfast)
 , I think it would pass for the real thing. Still working on it though.

So , I will ask the master to have a go at it , if you would be so kind.

We both know grits without fixin's are as close to glue as you can legally
eat with a fork or spoon.

OBTW--Can says::

Total Carbs 10gr
Fiber 6gr
This would be 4gr net I believe
I am going to call them Monday to verify that count.

              Princess is a garbage disposal that barks, down the hatch.

Remember way back when the Western TV Rawhide , Wooster made pan
coffee , this way boil a pot of water, throw in coffee ,stir with spoon ,
if spoon doesn't float add more coffee,

My recipe for "Palatka Chili is, if it don't require a gulp of ice cold
beer (now diet beverage) after a spoon full , add more chili powder.

Really , I post it in the next day or so.

I'm going to have to work in this new Eden Soybeans first.

Chilly and Chili here tomorrow,

Gonna be in the 40's tonight and high 50's tomorrow.

I was in Jacksonville today for a round of shopping and stopped
by Costco for ground beef and then swung by Wholefoods on the way
back to US 17 for some Eden Organic Black Beans. Never used these
so it will be a new version of my chrome on the bumper-hitch
melting version of Palata Chili. Love the carb count on these babies
though, I am making enough for a few friends so if you here about
a outbreak of human flame throwers It's my fault.
