I have been having a lazy day and decided to look at some of the videos and Im so glad because now I know how you guys do it and I wont complicate myself...
Question: Can I just use the pork rinds or do I need to mix it with the low carb corn muffin mix?

You don't have to mix them with anything.It lightens them up alex to mix them with almond,corn muffin mix,goldenflax or soy flours ;)

What is a "stick" of butter? Here on the farm it comes out of the churn in lumps and here in Canada it comes out of the store in pounds, but no sticks.

If you added BBQ seasonings to your recipe, you could make some phenomenal BBQ pulled pork.
Just a thought!... ;)
I have some Walden Farms Marinara sauce (to which I usually add some crushed garlic, Italian seasoning, & salt) and some Shirataki noodles. I'll try this later this week! :)

Hi Doug! :)
As an alternative, if you bake your chops in a plastic oven bag, they will stay uber moist and juicy too!
Not to mention they'll cook a whole lot faster with less mess.
Just season them up the way you like in the bag (and/or add sauce) before baking.
Most all grocers carry these baking bags in sizes from small to large turkey.

I love watching the food network. There is a show called Challenge where chefs have to make a dish from a basket of mystery ingredients. One of the baskets had lamb chops and pork rinds (plus two other ingredients). And immediately I thought of your pork chops. One of the chefs (out of three) used the pork rinds as a coating to fry the chops. The judges were so incredibly impressed with his creativity with the pork rinds. All I thought was...Doug already thought of that...next :) I'm loving it!!! :) :) :)

He is good about cleaning as he goes but I do the cleaning because I like things done my way. ;) Wow that sounds anal huh??

Let me tell ya about kitchen cleanup. If you are a VET , you have been
at some time on the business end of a dishpan brush and rag.
I am of the firm opinion ever man (No disrespect here,ladies) needs to spend
at least a summer in the chow hall of the US Military.
1. He will respect his momma , one heck of a lot more
2. He will understand groceries are cooked not handed out of a drive-in window
3. Good food needs good cooking
4. Either you clean it up or you don't eat your next meal it is provided on (Clothes-line security detail instead)
5. He will never believe again cooking is just woman's work (goes with #1)
6. He will lose 25 lbs or more and always say "My momma never treated me this way". (Goes with #1)
Oh well this is my two cents worth, I welcome yours
remember a lot of good men and women fought and died
to see you have the right to have your two cents worth respected.

A little anal-ness is good. I used to spend all my time creating a spotless house and one day I realized that I had a clean house but no friends, so I started letting the housework slide and started enjoying doing things with people. Now I have a semi-clean house and lots of friends!
Buford, I agree, cooking is a unisex job. Some men enjoy it, some women hate it, but it has to be done.

This may seem a silly question, but wouldn't adding baking soda to the beans make them taste too salty? With my hypertension, I use very little, if any salt so I am hypersensitive to the taste. Using more than a pinch makes my food too salty.

Baking soda (sodium bicarbonate) is high in salt (sodium).
So if you're sensitive to salt, be careful with it.
