I still can not find Umpa's Potatoe Salad Recipes....lol..HELP! :-\

I had it in a file on my desktop:
Jicama Potato Salad (4 servings)
1 1/2 cups Jicama
1/4 cup chopped onion
1/4 cup chopped celery
2 boiled eggs chopped
3 large tablespoons mayo
couple squirts of yellow mustard
salt and pepper to taste
CARB COUNT 11 1/2 ENTIRE RECIPE(2.87 PER SERVING)
Peel Jicama and cut into 1/2 inch cubes. Put in frying pan with 1/2 cup of water and cook until water burns out, now here is the trick, have a kettle or pot with boiling water in it to add keep adding it and cooking it out till jicama gets soft. Remove from heat. Rinse with cold water and pat dry. Pour it in a bowl add rest of ingredients to bowl and stir well. Refrigerate. Then enjoy!
***For Cauliflower Potato Salad***6 SERVINGS
One Head cauliflower
1/2 cup chopped onions
1/2 cup chopped celery
4 boiled eggs chopped
6 tablespoons mayo(or to taste)
3 squirts mustard(or to taste)
salt and pepper
CARB COUNT 16.5 ENTIRE RECIPE(2.75 CARBS PER SERVING)
Break up one head of cauliflower into bite size pieces Steam cauliflower for 9 minutes. Rinse with cold water. Pat dry. Put in bowl. Add rest of ingredients .***GENTLY*** mix well. Refrigerate. Enjoy!

I will be trying this next week for my daughters birthday dinner. I am just trying to figure out which to use jicama or cauliflower.
Everyone else will be eating my famous potato salad but I will stay the course ;D

Does jicama ever really get soft using the "keep adding boiling water" method? Just wondering because I'd love it so much more if it actually got soft. I have boiled it and boiled it for a long time and it never really got soft.

yes.if you add cold water it just firms back up everytime you add it.By adding boiling it breaks down ;)

If you cook the cauliflower just right, it's SO MUCH better than potato salad!
I steam it for about 4-5 minutes so that it's still a little firm. 8)

Thanks Andrea I will. My biggest problem with the Jimaca Potato Salad plan? Kids ate the whole thing before I could cook it. They got my Walden Farms Caramel dipping sauce and went to town. What am I going to do with them? lol

Hmmm...... I hadn't thought of using the carmel sauce on them ::) I bet it's pretty go. I'm gonna have to give it a try now ha! Love raw jicama

Re the cauliflower potato salad...
I was searching here to see how anyone made this and looky what I found LOL! Anyway, I thought I would throw this out there. I had cooked some frozen cauliflower in order to make caulimash. Had about a cup of leftover caulimash and a cup of leftover cooked cauliflower in the fridge. What to do with it? Hmmmm. They were both cold so I cut up the cooked into chunks and put it in the caulimash. I added about 2-3 tsp mustard, 2 tbl SF relish, 2 drops sweetener, sprinkle of onion powder, salt, pepper. Mixed well and and surprise! A variation of cauliflower potato salad. Next time I'll try Umpa's recipe!

Since I can't find jicama around here, I substitute turnips.
I peel and cut them into chunks.
Then, par boil them with a few drops of FTS Zero until they loose their crunch (but firm).
The Zero offsets the "turnip twang". ;)
