This is a fast easy delish recipe the day after a roast pork dinner :) I love recycling food the day after a meal, this makes a wonderful lunch

LOW CARB Pulled Pork Burrito

Ingredients

Left over pulled pork
Low carb salsa
Low carb tortilla
Shredded cheddar cheese
Sour cream
Cajun seasoning

Directions

1- Mix the shredded pork with salsa and cheese to your liking
2- Lay out your tortilla and fill, roll it up and place in a baking dish
3- Paint a bit of salsa on top of the burrito and cover with more cheese
4- Bake at 350 degrees till the cheese is melted
5- Plate with chosen veggies, top with sour cream and sprinkle Cajun seasoning on top
