Thanks for the replies and advice!

Shoelace, thank you for your tips. I am really afraid to try any other type of weight loss strategy, since Doug's book is the only tool I have been able to use to lose weight.

Tony, I will post my daily intake this Saturday. Time isn't on my side right now due my very busy schedule at work.

Umpa, you may have hit the nail on the head with the lack of sleep and condiments comment. I do not sleep enough, and I have realized I add too much ranch to my salads. I have found a tasty salad dressing called Greek Salad Dressing made by Kroger. It has zero carbs.

Doug, I do not drink very much alcohol. When I do, which is rare, I drink Vanilla Vodka with a diet coke. I do know I have been eating too many peanuts. Nuts, for a lack of a better way of putting this, keeps me regular. Otherwise, I really struggle with getting enough fiber and not eating too many carbs. For the past three days, I have been adding Miralax to a glass of water to see if it helps. I am doing this instead of eating peanuts.

I do want to say thank you for writing your book. NOTHING else, besides phin-phin has helped me lose a substantial amount of weight. I really, really want to get to a healthy weight.

I started this way of eating March 6,2011. I lost 110 pounds in nine months. The unfortunate thing is, I still had about 80 lbs left to lose. Fast forward to March 6, 2014...I have been at a stand sill for well over a year, and as a matter of fact, I have gained back 30lbs. I am very down and I do not know what to do. I cannot figure out why this no longer works for me, nor do I know how to get the scale moving back in the right direction. Anyone else get have a similar situation? Can anyone give me advice and encouragement? I am eating good and exercising more than I have the entire time I have been eating low carb. Everyone one at work always tells me they cannot believe my will power to pass up ALL the very high carb foods that are in the lounge (I am a teacher). I just think to myself...WHY? Anyway, I am just feeling incredibly down and thought maybe someone can help. How can I eliminate all carbs and still get enough fiber? I'm sure there is a solution, I just do not know it yet.

Wanted a BLT - made a OMM in a square container and cut it in half.  Toasted it and put in the bacon, lettuce, tomato (mayo).  Same goes with a toasted cheese sandwich - OMM + cheese and panfried in some butter.


What is OMM?

I love watching the food network. There is a show called Challenge where chefs have to make a dish from a basket of mystery ingredients. One of the baskets had lamb chops and pork rinds (plus two other ingredients). And immediately I thought of your pork chops. One of the chefs (out of three) used the pork rinds as a coating to fry the chops. The judges were so incredibly impressed with his creativity with the pork rinds. All I thought was...Doug already thought of that...next :) I'm loving it!!! :) :) :)

I did make this dish, however, I think the tofu was too soft b/c it was way to mushy in my mouth. Maybe I should try it again with really firm tofu and smaller pieces. I do agree with you that tofu has no taste really, it is the texture that's got me not wanting to ever it tofu again...but I will try :)

The problem is the soy flour falls apart when it hits the boiling water ;) I just bought a additive and will be experimenting with pasta again for my new cookbook.(I am a mad scientist at heart! :D)What type of pasta are you looking for?Did you find Ask Umpa?

I love that you are a mad scientist...you get to experiment (and have fun) and we get to enjoy the good food you create :) :) Can't wait for the cookbook!!!

I was just hoping to have a macoroni, or shell, type pasta for mac_n_cheese. I hope your experimenting works, but if it doesn't I know I'll be okay. Going without real mac_n_cheese is such a small sacrifice when I look at the big picture. I do not feel deprived at all!!!!

Thanks to everyone for the kind words and support. Umpa, have you tried to make pasta using Soy flour? I really miss mac and cheese but cannot , for the life of me, get my head wrapped around tofu. I have not used soy flour yet, so I do not know if it will work.

Doug and Umpa, I just want to thank you for all the great recipes!!! I am new to the Fat and Skinny family (I started my life change in March; gave up foods that turn into sugar in the body for Lent) and I probably would not have made it thus far w/o all of your great ideas. My mom found your book in the Library and lent it to me. Your book taught me and inspired me to make the change to save my life. My mom is also making the change!! I am tearing up while I type this b/c it just means so much to me. I am down 60lbs and have 120 to go . I am just concentrating on putting one foot in front of the other to get to the goal line. It's not about how long will it take for me anymore, it's just about being healthy from here on out. Also, I am really looking forward to making this yummy looking dish!!!
