Dan's Pork Broccoli Rabe Yum Fest:
This is one of my very favorite things my husband cooks. This is a HUGE meal (see picture below...only one serving) and so good! I ate it last night and still lost a pound!
It has around 6 carbs per serving but you could easily cut the serving in half and still be SO FULL!
    
Roast Pork

    * 1 (2 1/2 lb) pork shoulder
    * 2 1/2 tablespoons fresh rosemary (chopped)
    * 3 tablespoons fresh parsley (chopped)
    * 1 tablespoon salt
    * 1/2 teaspoon fresh cracked black pepper
    * 1 tablespoon olive oil
    * 1/2 lb sliced sharp provolone cheese

Broccoli Rabe

    * 1 lb broccoli rabe (aka rapini)
    * 3 quarts water
    * 1/4 cup olive oil
    * 2 -3 garlic cloves, chopped
    * 1/4-1/2 teaspoon red pepper flakes
    
Making the Pork:

  Mix the 6 ingredients in a bowl.
  Spread the pork roast out on a clean surface.
  If there are any large thick sections of meat, score them with a knife.
  Rub the mixture over all exposed surfaces.
  Follow oven cooking instructions on roast. Usually around 2-3 hours.
  Remove from oven and let cool completely. Usually 3 hours or so, can even put in refrigerator.
  After thoroughly cooling, slice into thin slices.


Making the Broccoli Rabe:

 Wash thoroughly and cut about 1/2 inch off the bottom of the stems.
 Cut the florets off the top and set aside.
 Bring 3qts salted water to a rolling boil.
 Add broccoli rabe leaves and stems and cook about 1&1/2 minutes then add the florets and cook until tender, about 5-7 minutes.
 Remove broccoli from boiling water and drain.
 Keep the cooking liquid in the pan, still warming on the stove.

 In a deep frying pan (which is cold) begin heat olive oil, red pepper flakes and garlic together over medium heat.
 Once the garlic begins to sauté, begin to time about two minutes (till very lightly browned) add drained broccoli.
 Sauté the broccoli rabe about 3-5 minutes longer.
  
Putting it together:
 Take your cold pork and blanch it in the brocolli rabe cooking liquid. (leave it for a minute or so)
  Place lettuce on a plate and place the warmed pork onto it.
  Add three slices of provolone over the meat
  After that top with broccoli rabe generously with a little extra sauce from the mixture. (this is where most of your carbs come in. So use less if you want less carbs.)

Also, I eat it over lettuce but my husband eats in on a big cuban roll. So if you have someone in the family that isn't as carb free as you are, it makes a great meal for them too.

Hi Jo, this is a lovely recipe...right up my alley. Umpa just bought a precooked Cuban Pork Roast (Mojo) I'm going to give this a try using the pork in the fridge  8)

I love this recipe! My husband made it for me last night. I ate the whole heaping plate and STILL lost a pound. I think it's magic!  ;D
