Title: SPINACH BREAD!!!!!!

Spinach Bread
Preheat oven to 350

Ingredients
10 oz. box of spinach drained well
4 eggs
½ cup parmesan cheese (kraft fine)
1 cup mozzarella
1 ½ cups almond meal
2 tstp garlic powder
½ tablespoon Italian seasoning
½ teaspoon salt
1 teaspoon baking powder

Beat 4 eggs. Mix almond flour with baking powder and add to eggs. Add rest of ingredients .Spray pan with Pam or grease with olive oil and put batter  in  pan. Batter will be thick. Bake at 350 for 35 minutes in preheated oven.

Hi Zombiegirl I am gonna try to take this dough and roll it out on a baking sheet and prebake it like a Boboli pizza crust and use it to make deep dish pizza.i will let you know how it turns out.Have a great day! ::)

i buy my almond flour/meal at amazon because its cheap.i have the amazon prime shipping so all my shipping is free with a yearly charge.I like the Red Mill brand because its reasonably priced and always fresh.Most grocery stores carry red mill flours in the baking aisle so if you ask the manager he can probally order it.Almond flour is very similiar to semolina flour.

I looked on amazon for almond meal and all I could find was a tiny bag for $35 that seemed terribly pricey to me. Im wondering if I could get it anywhere else....

Hi Beebs! What you saw at amazon was a case price.I do alot of baking so i order by the case.The website for the manufacter is www.bobsredmill.com (http://www.bobsredmill.com)  phone number is (800) 653-1339Most grocery stores carry this brand and if they carry it they can order any of the products.The amazon price is about$8.25 abag at case price.In a whole loaf of bread you use a 1 1/2 cups, same for cakes.It should last a while especially if you mix it with other flours.If i can help you let me know. ;D

It has the same consistency as semolina.It is very good!! I make a coconut cake with it that is out of this world! ;D

I am sorry,I thought you all knew how to make a yeast bread. All right then, here it goes. I mix the flour,oats,salt,yeast,gluten and flax seeds into my KA bowl and stir eveything by hand to have it mixed. Then I pour the warm water with the sugar dissoved in it into the KA bowl over my flour mix and stir it all with wooden spoon to get it evenly wet. Now I put the bowl onto the mixer stand ,add the oil and knead it all together with the dough hook for about 10 minutes. While the dough is getting kneaded I grease my 5x9 loaf pan. After the 10 minutes are up I stop the KA and remove the dough hook and cover the dough to let it rise the first time for about 30 minutes.Then I deflate the dough and shape it into an oblong loaf to fit into the loaf pan. I gently press the dough into the pan so it is even on top . Now it is time to let it all  rest and rise a secongd time for 45 minutes to an hour or until the dough is roughly 1 1/2 inche above the loaf pan. Baking the bread is the next thing and I bake it  485 F for 25 minutes,after I made 3 slits in top with a SHARP knife.After I take my creation right away out of the oven and then take the bread out of the baking pan to let it cool in a wire rack. I hope I did not forget anything important ?

This is a low-salt recipe and for most people you shoud double the amount of salt to give you a better tasting loaf

Oh, many of us know how to make yeast bread however this eating program eliminates all grains and flour. The challenge is to develop recipes without using wheat flour, grains or yeast. Hazelnut flour, almond flour, soy flower, flax seed flour are all acceptable. They do not metabolize into sugar the way grain flours do. Are you in the UK?

Beebs STOP!!! Do not buy semolina very bad!!I meant i use almond flour to make coconut cake!!!!You dont have to buy almond flour at all you can just grind almonds in a food processor!Sorry for the misunderstanding!!

Okay my little man!  ;D On page two of the  recipe board you will find the instructions for pizza.You can order the almond flour from amazon or grind up almonds in the food processor.If you need further instructions just "Ask Umpa".Now all 3 year old little boys need cookies before they go to bed so check out the recipe I just posted for Snickerdoodles! ;D Hope to talk to you soon!

Beebs is right.Katary is using pork rinds ground to make flour but you could use soy also.I havent tried flaxseed yet but it is  0 carbs so let me know if it works!

OK umpa,
             Its pizza time!! I live in almond country. I have been making my own almond flour for a while. This weekend however I am making pizza. I think I just drooled on my shirt. I cant wait. Spinach is one of my favorites. *Head scratch* Would other veggies work in place of spinach?

Yes other veggies work, but in the crust stay away from the watery ones.Invest in a pizza stone if you want to crisp it up.If you want to omit the spinach you can roll it out on a board with alittle flour to get a thinner crust, you can't overwork this dough.
I have several pizza doughs this is  just one.Please give me feedback because the breads and the pizza doughs are going in my bakery book.Love a man that cooks! ;D

OK umpa that will be my next venture spinach crust pizza. I made jacama cheesy fries last night. Turned out fabuloso. I ate to much cause every one else was afraid to try it. I am Le head chef at our Bistro. Just surrounded chickens that wont try anything new. They are usually the one that say I have a five star kitchen as long as its meat and taters :P

You can roll it out but i would omit the spinach in the crust, it will break up the dough.

 ;D its in the oven...it looks more spinach than i would have thought ..as i guessed the amounts...i don't really know conversions...maybe i didn't put enough almond meal in...just looked in oven..it actually looks like pizza bread... ;D ;D hope it tastes good...i'm hoping to try it with a low carb soup tonight..thats if the soup is low carb..here are the details..per 100g..protein 54.5 carbs 25.8 of which are sugars 13  fat 1 of which are saturates 0.24 fibre 6 ...the serving size per sachet is 33g...i'm unsure whether to eat it..xx

Yes Bev you need a loaf pan unless you are making pizza.I really need to give better directions on my recipes! :D
I think ice cream makers are fun and i think everyone should have one.That way you know exactly what is in your ice cream and your not limited on flavors.
I have lots of soup recipes, let me know what you would like and i will post a recipe! ;D

 ;D i havn't got much in tins/pans etc..i didn't cook much before last couple of weeks..i'm trying to update my kitchen supplies though..i've got some yorkshire pudding tin's..they might do for individual pizza's..my youngest son wasn't to keen on the bread on it's own..he said it may taste better with a curry as it's spicy..xx

The whole loaf is 18 carbs ,so it depends on how thick you cut it.I can usually get 20 slices.It is very filling.Makes a very good pizza crust too.There are also zuchinni breads and rosemary bread recipes posted.I am in the middle of writing the Fat to skinny Bakery Book so I have been doing alot of research.If i post a recipe its safe.If a recipe is posted on the forum it is reviewed by doug and I.If it is not low enough it is corrected.

OK Beebs, this is what I suggest. Next time you buy a Jicama pick one just a tad over a pound (to cover the peels), when you get it home shred it and cut it up. See how many cups you end up with and cross reference the carb counter book for the final count

Ok...I starting to make this and i see one head of roasted garlic in the recipe...ok I don't do well with fresh garlic so I bought crushed garlic...how much do I use?  

Update:  I used 1 tsp of crushed garlic and put in muffin pans.  Coming out of the oven now and they smell delicious.   Ok gonna try them with a little butter on them. :D

Result: WOW...they are wonderful with some butter on them.  Great job Umpa! Love them.  I might just have to take them to my Hallmark company picnic! :)

You can omit the garlic izzet. 1 1/2   teaspoonsminced garlic added to  the mix ;)

Umpa, can you please clarify a couple of things for me here re the spinach bread.

I thought I had everything required, but when I went to make it, I didn't.  I substituted and it was divine anyway.  You're so clever!

My question are:

I had no whole garlic and thought that a whole head of garlic would be well, um, too garlicky, not to mention high in carbs?  Am I wrong here?  if 1 clove of garlic is 1 net carb, how much is a whole head of garlic?  is it multiplied by the amount of cloves in it?  Does that mean my 1 tsp of crushed garlic really reduced the total carbs in this bread?
I'm just trying to work out how many total carbs my bread was, because I'll be using it for a little while and want to work it out for my daily count.

The garlic is optional.If you have the carbs to spend use it because it is very good for you.(it is 1 carb per clove-i get 8 per head)Powdered garlic is lower in carbs if you want to use it.I make this in mini loafs too for dinner parties. ;)

It is just delicious.  I had it as toast (didn't toast that great in the broiler, but who cares) and I was so full after breakfast!

I did, I didn't have enough parmesan and didn't have mozzarella, so I put more extra old cheddar in it.  It was so delicious.  I had it for lunch as well as breakfast!

I am a little worried about the calculation though, because of the almond meal and not knowing what the total carbs are.  Should I go with the 18 carbs for the almond meal alone?  If so, mine came to about 29 carbs for the whole loaf, because the frozen spinach was 8.

That sounds so much higher than your 18 for the whole loaf!!!!!!!!!!!!!!!!!

Thoughts please?

The cool part about inventing recipes is well.......inventing them :) I would think you could switch up the cheeses to change the flavor without issue. Try smoked Gouda for a woody flavor, or sharp Cheddar for a tangy flavor. It's all good  ;)

I was in a baking mood last night and made some.  I used Flax Seed meal instead of the Almond flour for more fiber, 0 carbs.  I also replaced the cheese with real cheddar and it came out pretty good.  Made them into muffins and by my calculations it was only .58 carbs per muffin.  The only carbs I had in this recipe was the spinach, for 10oz it was 7 carbs.  I use Egglands best eggs and they say they are 0 carbs.

Turned out wonderful just make sure you really squeeze out all the liquid from the spinach. lol

I used to keep egg whites in the house all the time.They work just as well in any of my recipes and cut the carb count.I just have to use what I have on hand because we live so remote ,going to the store is a big deal! :D

Doug says a whole egg is .6 its only one carb if its a jumbo.Egg whites count as zero.I didn't know this until you brought it up Izzet.i have been counting my eggs as one carb each.I am gonna try in my baking recipes from now on to use just egg whites. ;)

Umpa I just made the spinach bread ,but i left out the spinach and all the seasonings except the salt,used 3/4 cup of almond flour & 3/4 cup of mill flour  put it on a medium size baking sheet and it was delish !!!!!!!!!!! I got 16 pieces so it was like 1 carb a piece .

 I will make it again as a thick Pizza crust . But my only question how can I spread it out easier because it is so sticky you can hardly roll it or press it out any secrets ? Thanks for all you do

I am always here to help you Jo! :) I spray my hands with non stick cooking spray and use them! :D I don't like to add additional flour because it adds carbs.Just make sure you spray(or grease) the pan really well. ;)

I skimmed the posts quickly and wasn't sure what size pan you used in the original recipe.  I was thinking of using my 9X 13 Pampered Chef stone.  Thought that might crisp it up a bit?  Also, how long does this keep?  In baggie or fridge?  Thanks :) :) :)

I like loaf pans,or mini laof pans.You can use just about anything.Is your pampered chef pan like a La Coche Beth?

Not sure what la coache is??? Pampered chef is likes baking stone that you season and can't wash with soap. They come in all shapes and sizes. If I use mini loaf pans should I just divide up the dough into each mini pan? Thank you.

yes this dough can be cooked however you like.It is my favorite because it always bakes well and smells heavenly.Makes great grilled cheese too!A La Coche is a ceramic covered baker.Like a pizza stone with a cover ;)

Finally made this!  I think it will be perfect for a pizza crust.  I halved the recipe, and used 1/4 cup each of flax meal, soy and almond flours. I think with all the other flavors plus pizza toppings and sauce I could use  all flax meal to save carbs. ;). It sure did smell good while baking.

I had forgotten about this recipe until Beth's post the other day.
Made this last night and could not believe how WONDERFUL it is!

To top it, I made some garlic butter (with fresh crushed garlic) and... OMG!!!... YUMMY!!! ;D ;D ;D ;D ;D

This will be a staple around here! ;)

OMG Beth!!!... That's a fantastic idea!!!... Too cool!!! 8) 8) 8)

Perhaps shaping it like small sticks before baking.
Cooking them about 1/2 way... Then painting them with garlic butter and topping with cheese would be so YUMMY!!!

Spinach Bread
Preheat oven to 350

Ingredients
10 oz. box of spinach drained well
4 eggs
½ cup parmesan cheese (kraft fine)
1 cup mozzarella
1 ½ cups almond meal
2 tstp garlic powder
½ tablespoon Italian seasoning
½ teaspoon salt
1 teaspoon baking powder

Beat 4 eggs. Mix almond flour with baking powder and add to eggs. Add rest of ingredients .Spray pan with Pam or grease with olive oil and put batter  in  pan. Batter will be thick. Bake at 350 for 35 minutes in preheated oven.
 ;D entire loaf 28 carbs
I'm going to make this using zucchini since I don't have any spinach on hand... what do you think?

I had this bread toasted last night. I poured some olive oil on a plate added some grated romano and chopped fresh basil and parsely and dipped the bread in it.It was so good!! :)

Thanks Umpa. The spinach bread makes a wonderful pizza crust. Smelled great cooking too. I liked my pizza even  better the the next day for lunch. I can't tell you how much I appreciate the recipes and Doug's cooking
