No-Bake Coconut Cream Cheesecake Bars
1 8oz package cream cheese (8 carbs)
2 tablespoons coconut oil (0 carbs)
1 tablespoon warm water
1/2 cup heavy whipping cream (0 carbs)
1/2 cup shredded unsweetened coconut (8 carbs)
1/4 - 1/2 cup xylitol to taste (0 carbs)
1/8 teaspoon salt (0 carbs)
1/4 teaspoon pure vanilla extract (0 carbs)
1/4 cup finely chopped walnuts (2 carbs)
Additional 1/8 c unsweetened coconut for garnish, if desired (2 carbs)
Put the cream cheese and coconut oil in medium mixing bowl and let stand to soften.
In a separate bowl, add the tablespoon of warm water and about half of the heavy cream to the coconut to moisten it.
Once the cream cheese and coconut oil has softened, beat the cream cheese mixture and gradually mix in the xylitol, salt and vanilla extract. Gradually beat in the remaining heavy cream, then the coconut. Beat until light and fluffy.
Crust: Sprinkle the chopped nuts over the bottom of an 11 X7 baking dish.
Use a smaller dish if you want thicker bars
Spoon cream cheese filling onto crust
Sprinkle 1/8 c unsweetened coconut on top to decorate, if desired
Cover and refrigerate until firm.
Total carbs =20 (or 18 if you do not use 1/8 c unsweetened coconut for garnish)

These sound wonderful....I'm a coconut addict :)
-
Can someone tell me what xylitol is - sounds nasty!
-
This sounds great... I love coconut!!
-
xylitol is a sweetener made from birchwood, that in its purest form has 0 net carbs:)
-
xylitol= YUM!
-
Ok, where can I get it from? Is it in the grocery store, if so, where might I find it?

Most stores that specialize in supplements carry it. I think it is also used to improve intestinal flora. It doesn't sound yummy but it has a wonderful sweetness
and it takes less of it to sweeten than sugar.
-
From the home page type xylitol into the search bar on the right. Every post with xylitol in it will come up, here you'll find other peoples posts where they have bought xylitol. ;)
-
Great, thanks.
Maybe the Health Food store requires a visit from me methinks!

Mmmm...I am a fool for coconut :)
Joanne---do you think canola or some other oil could be substituted for the coconut oil?
-
Can I use the sweet & low liquid sweetner 0 carb for xylitol . I just dont have the money to buy all this new stuff . I know once you get it it will last awhile. But it s a little costly at first.
-
Umpa..can you give your opinion on replacing the coconut oil and xylitol?
i just do not have enough experience yet to answer
Thanks
-
Also, while you're answering these questions, umpa...here's one more general baking question :)
In your experience converting SUGAR recipes to FTS recipes, do you have any guidelines for how to replace sugar with xylitol? Is it literally cup for cup? Or do you find you need a bit less/more xylitol than sugar?
Thanks for your help!

Xylitol is twice as sweet as sugar.Depending on the recipe and other ingredients(if any other ingredients are sweet) i cut it in half.If there are other sweet ingredients I cut it down to 1/3.Xylitol makes a great simple syrup because it melts easily. It also prevents tooth decay. If you don't have xylitol use the sweetner of your choice.I also like stevia.Just remember with stevia and xylitol make sure its 100 % pure with no fillers.Fillers mean carbs. The coconut oil can be omitted or replaced with walnut or grapeseed oil.

The Coconut Cream Cheesecake Bars are SOOO good and really easy to make! I cut them into 12 bars which would be less than 2 carbs per bar. I will definitely be making these again! I think I can make it through the holidays with great desserts like THIS!

It is easier to get through the holidays with these great recipes because you are not choking on the guilt of indulging in treats that are bad for you. I don't know about you, but in the past, anytime I ate things that I knew were putting pounds on me, I would feel so bad later. FTS is so great! I love being able to have treats and enjoy every bite without any guilt. Thanks Doug & Umpa!!

These are great! Made them to take for Easter family lunch today. We have 2 immediate family members who are diabetic but everyone who likes coconut enjoyed. I added a little melted butter to make crust (nuts) stick together.
-
Made these again yesterday with a little change! Used the graham cracker crust from the Dixie Diner. Left coconut out but melted a little of the sugarfree chocolate chips and blended with the cream cheese mixture. It was great, kind of like a Oreo taste. My girls don't like coconut so this works, it sets up great and was yummy!

Sounds good Amber! ;D ;D
I used to love Double-Stuff Oreos!
