I did the math and the entire recipe equates to 28.85 carbs. I don't know how many muffins it makes though.

Desserts and Sweets / Low Carb Key Lime Pie
« on: May 23, 2010, 04:23:34 PM »
After that spicy meal treat yourself to this!

ingredients: (makes 8 pieces)

crust-
1.5 cups almond meal/flour (18 carbs)
3 tablespoons melted butter
9 drops FAT TO SKINNY Zero Sweetener or 3 tablespoons xylitol

pie filling-
2.5 cups heavy cream
6 egg yolks (.6 carbs per yolk = around 3.5 carbs)
18 drops FAT TO SKINNY Zero Sweetener or 6 tablespoons xylitol
1 teaspoon vanilla extract
1/2 cup sour cream (4 carbs)
3/4 cup key lime juice
1 tablespoon grated lime zest

Crust:
Preheat oven to 350. Melt the butter and mix almond meal and sweetener in until crumbly. Pat into 9" pan with fingertips or a spoon. Bake for about 10-12 minutes until the crust is beginning to brown. After 8 minutes, check every minute or so, because once it starts to brown it goes quickly.

'Sweetened Condensed Milk':
Whisk heavy cream, egg yolks, vanilla, and sweetener. Cook over low heat, stirring until thick. Cool completely and store in non-metal.

Pie Filling:
In a medium bowl, combine 'sweetened condensed milk,' sour cream, lime juice, and lime rind. Mix well and pour into graham cracker crust.
Bake in preheated oven for 8-12 minutes, until tiny pinhole bubbles burst on the surface of pie. DO NOT BROWN! Chill pie thoroughly before serving. Garnish with lime slices and whipped cream if desired.

Each piece is 3 - 3.5 carbs!

I don't know if any other cheeses will work for this exact recipe. Maybe feta or something similar. There are a ton of different fondues you can make but none that are this simple.

I'm sure Everest will love anything you make. He's never had peanut butter, so I don't know if he'll like that. He loved your coconut cake from the Keys visit, though.

I was planning on making him something very small and simple on the 6th just so he can eat some cake and open a present on his actual bday =]. Know any recipes that are easy and yummy?

Sides and Snacks / Super Easy Goat Cheese Fondue
« on: May 20, 2010, 10:22:11 AM »
(serves 2-3)
6 oz. Crumbled Goat Cheese
1 tbsp Extra Virgin Olive Oil
1 tbsp Dry White Wine (if you don't cook with alcohol, try substituting with about a 1/2-1 tsp of white wine or cider vinegar)
Raw broccoli, sliced zucchini & squash, celery sticks, any low carb raw veggies that would work well for dipping.

This would work best in a fondue pot, but if you're like me and don't like owning something you use only once a year you can use a pot.

On low heat put all ingredients in a small pot. Stir until melted. Keep on very low heat to keep cheese melted (either on the stove or by candle or fondue pot). Dip with veggies and enjoy!

I'm going to make Everest his first birthday cake on his birthday because I don't want to kill him with copious amounts of sugar, haha. But I still want him (as well as the rest of us) to enjoy it. Do you have any ideas on what to make? I bought almond flour/meal the other day, would that be good for a cake? Do you have any recipes Grammy??

Beverage Recipes / Re: Creamy hot or cold Cocoa!

Blue Diamond sells an unsweetened chocolate almond milk that is pretty amazing. All you have to do is add some sweetener to it and heat it up and you have hot cocoa (I'm all about easy!).

This works really well with zucchini, too =]
