I love this recipe Umpa came up with today...delish!
Easy Low Carb Artichoke Pimento Dip

Ingredients
1 4 ounce jar artichokes chopped
8 oz block of Philadelphia Neufchatel Cheese
1/3rd cup shredded mozzarella cheese
1/4th cup shredded Parmesan cheese
3 tablespoons mayo
3 tablespoons sour cream
1/4 cup diced green onion
1/4 cup diced roasted red bell pepper
salt and pepper to taste
Directions
Mix all the ingredients together and bake in a 350 oven for 30 minutes. Serve with low carb crackers and red bell pepper scoops.
