Paula D's Bacon Cheeseburger Meatloaf

 :D  Well, I'm a burger fan, and really enjoy my meatloaf too!  Here's Paula's recipe for BC Meatloaf.  I just left out the bread crumbs, and didn't use but about 5 pieces of bacon....and of course, used pork rinds to put on top for the crunch! It was super good...

Unless you slice your meatloaf paper-thin and only eat a slice or two, I hope you left out the 1 (3-ounce) can French fried onions!
That can would have about 36 net carbs!!! :o :o :o

Crushed pork rinds would be a great substitute! ;)

I too thought that's what you meant. But just wanted to be sure. :)

Carbs are sneaky critters!... We've been trained most our lives to ignore them.

i love meatloaf! Doug makes one with 1/2 pound ground beef,1/2 pound ground pork and 1/2 pound ground chicken.it is very  moist and yummers! :)

I printed this recipe off the website and modified it because I didn't want to waste full portions of ingredients.

1/2 pound ground chuck - 0
5 slices bacon (cooked extra crispy and crumbled) 0
4 ounces sharp cheddar cheese, grated 0
1 large egg lightly beaten (Carb Smart = 0)
did not use and bread crumbs
1/8 cup mayonnaise 0
1/2 Tablespoon Worchestershire sauce (Heinz = 0)
no salt
ground pepper to personal liking
and I added
1 Tablespoon mustard 0
2 Tablespoons SF Heinz Ketchup 2

Topping  mixed together
1 Tablespoon mustard 0
2 Tablespoon SF Heinz Ketchup 2
no french onions or pork rinds

Mixed all together in a bowl and shaped into a loaf, I made mine square.  I baked at 350 for 40 minutes and then added the topping and baked for an additional 10 minutes.  I cut into 4 pieces for 4 servings for a carb count of 1 per serving.

Now, it was pretty tasty, but I would suggest baking in a dish with a "rack" to let some of the grease drain off.  It was "floating" in grease since I didn't use any "bread" product at all.  I had baked in a larger than needed glass dish and when the time was up I immediately removed it from the baking dish and placed on a serving dish with a paper towel to absorb a little more.  Otherwise, I would fix it again.  My personal preference would be to leave the bacon out of the meatloaf (which tastes like a cheeseburger) and put crispy bacon on top just before serving.

Marty you might could use ground turkey or even half turkey and half ground beef to cut the fat even more???  Sounds like a good one though  ;)

Most of the time I use ground turkey for anything that calls for beef.  I find it really flavorful, and end up not using extra salt in my dishes.
I served this as individual patties off the indoor grill...really good wrapped in lettuce with pickles!  :)

I am thinking that this recipe could work as meatballs, too. I have a meatball pan that has racks in it. I bought the pan from Avon. You could even make it mini loaves in the meatball pan.
