This is another fabulous recipe for our FTS sister, KimP.
She really knows how to put a great dish together! :) :) :)

BTW, Last night I conjured up a nice Shrimp Scampi recipe that I served over shredded, parboiled cabbage.
It would work with most fish too!
If I had more time today, I'd post it now.

Someone please remind me if it slips my mind!... T

This could be one I can get Mary to eat. Most low carb pizzas have a cheese based crust that she does not care to eat, this one is pepperoni, just might work! Those vegetables will attract it to her. :)

My kid doesn't have normal taste palate. LOL
I have to get very creative cooking without  or using very little cheese & stay low carb.

My buddy allen jenkins came up with a similar recipe that I love. You get a mini muffin ( I guess you could use a cupcake pan but they wouldn't be poppers) Spray with non stick cooking spray.Put a pepperoni in the bottom of each one .Then you beat 4 eggs in a bowl add one cup of cheese to the bowl and a 1/4 cup each of peppers or onions.Pour the eggs mixture over the pepperoni and bake at 350 till firm.I like to keep these in the fridge when I am in grazing mode which is about once a month.You can serve them with a little pizza sauce or salsa if you have carbs to spend ;)

Hmm, I'm going to have to get creative in the kitchen myself. I need to see if I have a mini muffin pan. I inherited kitchen stuff from my mother & grandmother all within same year. Have not baked much in over a year, so I need to see what I have.

I like Guar Gum to thicken my recipes! Used it in my homemade teriyaki sauce tonight.
