General Discussion / Food Dehydrator

Doug and I stopped at Aldi on the way to the doctor this afternoon.  We had never been there and it was on the way.  I had just said to him we needed to get a food dehydrator to make some beef jerky.  We spotted one in there for 19.99.  Seemed like a good deal and has a 2 year warrantee. We bought it and went on over to Sam's Club for some meat.  Sad to say our Sam's did not carry the Emerald Cocoa Almonds  :'(.  Can't wait to play with our new toy this weekend.

Hi FTS Friends.  This is a little different post.  I know we have some real prayer warriors in this group and I would appreciate you remembering my husband Doug as he receives the first of two treatments for his macular degeneration which involves injection of the chemo drug Avastin into his eyeballs to slow the progression of the disease and hopefully improve his eyesight enough for him to be able to get his driver's license. This will occur tomorrow, Friday July 23rd.  Thanks in advance and I will keep you updated!

Just found this, haven't tried them but I wanted to share before I leave for work:
Cocoa-Peanut Porkies

8 ounces carbsmart chocolate chips (or any sugar-free semisweet chocolate)
3/4 cup natural peanut butter
5 ounce bag pork rinds

Put the chocolate and the peanut butter in a microwaveable bowl, and nuke on high for 1 minute. In the meanwhile...

Poke a hole in your bag of pork rinds to let the air out, then smash 'em up with abandon -- I just bash mine all over with my fist. You want them in smallish chunks.

The microwave beeped! Stir the chocolate and peanut butter, and if there are still some unmelted bits of chocolate, give the whole thing 1 more minute on high.

Okay, back to your pork rinds: Dump 'em in a huge mixing bowl. Take a second to spray a 9x13 pan with non-stick cooking spray.

The microwave has beeped again! Stir the peanut butter and chocolate together well, then scrape the mixture into the bowl with the pork rinds. Stir the whole thing up until the pork rind bits are evenly coated with the chocolate-peanut mixture.

Dump the whole thing into the pan, and press it out into an even layer. Chill till set, then cut in bars. Store in the fridge.

If you get 24 bars, each will have: 129 Calories; 9g Fat ; 6g Protein; 7g Carbohydrate; 5g Dietary Fiber; 2 g usable carb.

I adapted the SF chocolate recipe posted previously by umpa for the peanut butter cups.  I love almonds so I added 1/2 cup chopped toasted almonds instead of the peanut butter, about 1/4 teaspoon of vanilla and a dash of salt. I poured the mixture into  a silicone mini muffin pan and topped each one with a whole almond.  Amazingly good.  Oh yeah, and I reduced the xylitol to 1/2 cup and it is like dark chocolate which I love.  Mama's happy!  ;D

We have been on the program for one month now.  I have very exciting news!!  Doug's blood sugar has FINALLY come down to within the normal range even after a meal (for a diabetic.)  He is using very little if any insulin anymore, down from 4 shots a day including one long-acting.  .  He is still having trouble with his eyes, but I believe they are going to improve.  The retinologist is treating them aggressively and hopefully once he finishes all the treatments with a new prescription for glasses he will be able to get his driver's license renewed.  I am very excited.  The bonus for me is that I have dropped 4 lbs.

I told Doug when he showed me his glucose reading tonight (after a meal of stir fried cabbage, bok choy, peppers and chicken with chopped roasted almonds on top for crunch) and it was 140 that I would rather have that than all the diamonds in the world.  ;D

How to make Chocolate Cream Facial Mask:

1/3 cup cocoa powder
3 tablespoons cream cheese
1/4 cup honey
3 teaspoons oatmeal (optional)

Combine in a blender or food processor. I used this mini food processor that I forgot I had and just rediscovered while unpacking a box.
Put everything in there and blend till smooth.
It makes a dark, rich concoction that looks like you need to go frost it on a cake.
Use a small spoon or a finger and spread it all over your face. Let it sit for about 15-20 minutes. During this time, feel free to think about the meaning of life.

I got this from the Chickens in the Road newsletter.  Probably have to borrow the oats and honey from the unconverted, but this sounds wonderful!!

Doug and I just got back from making the rounds all over Raleigh to buy stuff for the Fat to Skinny way of eating.  We hit the Farmer's Market where some folks we go to church with have a nice little indoor store and bought some fresh sausage and veggies.  Then to Whole Foods where we found beautiful Jicama and Shiratake noodles which we just had for lunch for the first time, yummy!  Then to Kroger on the great La Tortilla Factory tortilla hunt.  Still haven't found those, guess I'll have to order online.  Browsed the recipe book for the first time this morning and can't wait to make some of these recipes.  I am about to go make the beanit butter cookies now.  Sorry if this is too long, I'm just very excited!!!!

Hi Doug,  I am fairly new to FTSFand E.  I found out about your book through GG BranCrispbread.  I have been using them for 3 years now.  I am married to a type II diabetic and over the past several years have been witnessing his health spiraling downward at a rapid rate.  He has recently been diagnosed with diabetic retinopathy, neuropathy in his feet and just had 3 procedures for venus reflux in his legs after being found to have a large DVT in his right leg last October.  My husband is also named Doug.  He has already had 2 heart attacks and 3 stent placements.  Doug will be 55 in June but feels he is already old.  On the weekends he mostly just wants to sleep.  Right now I think he weighs about 300 lbs at 6' 2".  I told him about your book and he downloaded it and read the whole thing in one after noon which was very encouraging to me.  We have done the yo yo thing repeatedly with other eating plans such as Atkins and South Beach.  I lost 45 lbs on WW and have kept off all but 10 for 4 years now so I am planning on changing to your eating plan with him and hope to lose 20 lbs myself.  I do exercise regularly, he does not.  We do have a fitness club membership and use the elliptical mostly but his feet swell and that keeps him from wanting to do a lot.  This is Memorial Day Weekend and I am taking advantage of an extra day off to get organized and get busy with FTS.  I'm not sure why I felt the need to share this with you but this has been a very emotional journey for me.  I want to do all I can to help him but I know it is really up to him.  Hoping you can share some words of wisdom for our situation (thanks so much for the ones you have already shared!).  I think I could use a support group for supporters!
