Sounds so good, I can't wait to try this! : ) I think I will add some ham or spam to it, too.
-
This does sound good. My husband wasn't crazy about the Macafoney & Cheese, but I'm sure he would like this. I have been trying to make things that he would eat too. He is thin but it is good for him to eat healthy too, besides I'm trying get rid of the idea that my kitchen is a restaurant.

Hey Doug,
DOGGONE IT!!!... I wish I could find Jicama around here!!! :( :( :( :( :( :(
Being a tropical plant, they do not do well in northern climates like here in the Northwest.
They require 9 months of warm weather to grow large tubers.
Around here, we're lucky if we get more than 2 months warm weather a year.
Every once in a while, I get a real Jones for something like this jicama au gratin recipe.
Do you know if there are any substitutes for Jicama?
-
I will have to try this that is for sure

Maybe one of the forum members would be willing to drop a couple UPS to you ;)

Could you use turnips or cauliflower chunks?

Could you use turnips or cauliflower chunks?
owensmath,
Are they the same consistency (firmness) as jicama?
I was under the impression that jicama is a firm resilient root that maintains its firmness after some cooking a bit like potatoes.
Cauliflower (like broccoli) becomes very soft after cooking for only a short time. So the recipe would need to be changed.
Not sure how turnips would do.

Turnips are much better than jicama. I use them for all kinds of stuff. Mash potatoes, cheesy potato casserole french fries. I replace all that with turnips!
-
Thanks beebs! :)
I'll buy a bunch of turnips next week.
-
Cauliflower works great, simply steam it for 5-10 minutes to take away a bit of the rawness but not to the musshy stage, the rest of the recipe will be the same.

In that case Doug, so would broccoli.
Broccoli with melted cheese has always been one of my favorites! ;)
-
so it will be au gratin broccoli. or au gratin cauliflower they all three sound good
-
Well I made the au gratin cauliflower and it was delish !!!!! :P :P :P fast and simple to make also just how I like to cook . I had a pork chop and Izzet's Bread with it . I count on the high side for 6 carbs for the whole meal . not bad for supper

This will be a great side dish for my roast tonight, cheesy and gooey! YUM!

Sounds good. I'll have to pick up some jicama this week.
Tony -- Have you checked Walmart? I'm in the NW too, but I've found our Walmart carries it.

Hi Rena! :)
I've tried this cauliflower and it was delish!
A brand new Walmart just opened about 12 miles from us. I will check it out in a few weeks after the initial crowds have died down.
I plan to make a day of it as the store is HUGE!
-
I love this as a side. I also make it with sour cream, cheddar cheese, little butter and some time a few onions!
-
Jicama is great in coleslaw too ;)

They sell farmers cheese at the walmart in the cheese section next to deli. Its like white cheddar but soft like mozzerela. You can roll it between your fingers. You can subsitute any cheese that you like that melts easily Mimzy. ;)

This is absolutely amazing. I replaced the Jicama with turnips as they are easier to find....first time in 31 years of marriage that I ever cooked turnips LOL! It was baking when my husband came home from work. Because of the look he assumed it was Jicama. I just love his expression when he finds out what I have experimented with LOL :D
We had this with broiled asparagus and london broil roast. Ummmmm delish!

Suz I have tried things in the last year that I cna not pronouce or have never even heard of . ;D If you had told me last year that I would be glad to get home from a vacation to get back to cooking cauliflower and jicama ,tofu noodles I would have looked at you like you were a alien . Just thinking about it makes me laugh

We like to eat!! :D The reason fat to skinny works so well is the replacements .Its a lifestyle change. We don't remove foods from your diet we replace them .That way after you lose the weight there are no foods to add back to make you gain weight.Cycle broken ;)
