Yummy!  Jo do you just fry them in a skillet or do you have a deep fryer?

I love jicima but don't know how to prep it. The vegetable is HUGE and REALLY HARD to cut into. Am I supposed to nuke it first? Because that thing raw is just a monster  >:(.

OK. I will have to buy a machete to get it into the smaller pieces first!   :D

I'll give it another shot. I bought an instant veggie dicer thingy that I saw on tv so I might try to use the french fry cutter. I really want some of those jicima fries!

Can you get smaller ones? In NC we can get them about the size of a orange ;)

Mine was huge too but my potatoe peeler  gets all the peeling off easy . Now it is hard to cut into fries but with a big knife it is easier

The ones around here seem to be monsters for some reason. I might try it again but I don't want to hurt myself. That would suck. Wish I could find a deli that would prepare them for me.

Wow Umpa, I'd love to find some smaller ones!  Around here they range around the size of medicine balls lol!   :D  A machete might come in handy come to think of it!  I only seem to be able to find the smaller ones in the winter time.  Oh well, like Andrea said - great workout!

http://theulufactory.com/

This is a link to a website that manufactures native Alaskan type knives. Check it out.  I use mine when I cut meat up or hard veggies.

I find it easier than even a large knife...and feel safer.

If it would help you feel safer, get one of those cutlery protective gloves. Here is just one example.
