Title: COCONUT CAKE !!

This recipe is absolutely heavenly!  ;D

COCONUT CAKE

4 eggs (4 carbs)
1 ½ cups almond flour (18 net carbs)
1 cup coconut unsweetened (10 net carbs)
¾ cup xylitol (or splenda)
1 tablespoon vanilla
2 tsp baking powder


Beat 4 eggs. Add coconut and vanilla. Stir in xylitol (or splenda), baking powder and almond flour. (batter will be thick) pour into greased 9x9 baking pan. Bake for 30 minutes at 350 in preheated oven.

The entire cake is 32 net carbs so depending on how you cut it up will depend on the single serving carbs. I cut the cake into 20 servings so it comes out too 1.5 carbs per serving.

Yes Jo and it's great!!   I had made it before, but ate it all before I took a picture! lol   I baked it again last night and had a piece for breakfast this morning.  In the bakery book it's listed as 20 carbs, but I noticed above that Umpa says it has 32.  You should try it!  I was thinking this morning it might be tasty with some sugar free cream cheese icing on top too.   ;D   I try to only bake one thing a week now so I don't over do it.

 I wonder if you can leave the coconut out and it be just like a coffee cake maybe add a little cinnamon?

It's a whole cup of coconut, so I just don't know what would happen if you left it out..??  I am sure Umpa can tell you.   There may be another recipe in the bakery book for something closer to coffee cake....??

The carb count changed because the almond flour I used for The Bakery Book is unblanched at 4 carbs a cup.I have never made it without coconut,what would you want to subsitute Jo? You need mass ;)

Oh ok!  Thanks Umpa.  I just checked my bag of almond four.  It's Bob's Red Mill and it is blanched.  I hadn't even noticed that little detail.   :-\   ;)

Umpa I dont know I like easy recipes and this is a easy cake recipe . It doesnt have ingredients that I have to buy and only use once . I want like a coffee cake but easy like this . There are a bunch of good ones in the book but I am not a Baker that is for sure . LOL 
I guess this could be a coffee cake  ;)

 I like coconut so I am gonna try this one . The only unsweet coconut I can find is in the freezer section ,is that the one yall use ? Do I just pour it out and let it dry out a little to get the mositure out ?

Jo, the one I use is Bob's Red Mill brand, and it's in the organic section at Kroger, and on the diabetic aisle at Publix.  It's dry and in a little bag like almond flour.

Yes.  On the bag it says "Bob's Red Mill unsweetend flaked coconut".  There's no moisture to it.  The bag looks just like my almond flour bag, and I found them in the same section together.  ;)

Yes you could use than just dry it.You could thaw it and just put in a frypan for a few minutes to get the moisture out.Make sure it is unsweetened.I love toasted coconut.Let me know how it works for you and Tyler Jo. :)

 Ok as we all know I am not a baker . I had to use a fresh coconut to get unsweetened , so after I finally got the thing open I thoght it smelled a little funny but it had liquid and it was white . I had never opened a fresh coconut so I thought well  so I made the cake and when it was baking it smelt like liqour .

 Got it out let it cool tasted it and it smelled & tasted like liqour  .  So I opemed up the other coconut and after that long process I found that the first one was bad .  :P :P :P >:( >:(

So I threw the cake out and it just kills me because the xylitol & almond Flour is so expensive . But I made it again and it was delish  ,my hubby loved it Tyler thought it was OK .

1.2 per peice for coconut cake  all I can say once again is Umpa is the BomB !!!!!

Yes Jo.When I make sweets unless they are crisp they go in the fridge.We don't eat them quickly.Its weird because when you can have what you want(cake cookies ,etc),you don't eat alot of it! ;)

Made this on Friday with the cream cheese icing (blackberry).  The cake is really good and easy!  Icing was okay but not necessary  :)

We might add a spoon of 50-50 preserves and it's mighty YUMMY! ;D
But their great plain too!
We like to nuke 'em to warm them up a little. It seems to help bring out more coconut flavor!

They are Jo because the ingredients firm back up.I keep my cookies in the freezer,especially the beanit butter and gingersnaps ;)

Ok I had to try this one.  It is so easy and very good.  I love coconut!! 

This is wonderful by itself but I was wondering if it would be good as a jello poke cake.  I think I'm going to try it next time with maybe SF lime jello and whipped topping on top  Mmmmm Mmmm  ;D ;D

Too sweet it is better the next day out of the fridge cold !! The cocunuts get kinda hard so it is like it has nuts in it  Yummy  I need to stayy away  ;)

I should stay away to.  I would probably drop my weight faster if I did.  I didn't have anything on hand in case I had a sweet tooth though.  I plan to wrap and freeze each piece to make it more difficult to grab and eat.  You are right though it is way better the next day  :)

Thanks Umpa, the grandbaby's keep me busy in a good way!  You know the coconut cake with the cocoa added reminds me of a German chocolate cake.   :)

I've always loved German chocolate cake!

I think I'll try this along with a cream cheese frosting with SF coconut & coconut extract added to it.
That should taste very close to the high carb original.

The frosting is not necessary Tony.I made this last night for a dinner party with the cocoa powder and just a squirt of redi whip is all it needs.AWESOME!

I agree Umpa.
Using the whipped cream (especially 0 carb like Land O Lakes brand) would minimize the carbs.

Sometimes, I enjoy it plain with my morning coffee... It's soooo gooood!!! ;D

Here is a question about the carb count in the almond flour. I thought almond flour is 1 carb per fourth cup so wouldn't this have 6 carbs not 18 for the almond flour?

Never mind! I just read the rest of the posts and see that thedifference is betweem blanched and unblanched almond flour! I might make this cake instead of umpadoodles... maybe I'll make both.

i like the unblanched Now Brand.Its 4 per cup.Although the bag says 10 ounces its really 2 cups.You don't pack low carb flours like white flours.You want them to stay fluffy. ;)

Umpa, I made this cake for company - overweight, but not FTSers. I added 1/2 cup sour cream (8 carbs) to it for a moister cake. They absolutely loved it! I cut my cake into 16 pieces and it came out to <2 carbs per serving. One of the ladies wants more information, so I'll be sending her here.  Next time I'll try adding 0 carb mayo to it instead of sour cream and see how it is. The first time I made coconut cake cupcakes and they were a little dry. This time it was perfect!

I ate the smallest piece and will freeze the couple pieces left for another time as I'm not having sweets now, but I did want to try it out on non-FTSers.

I used to add 1/2 cup sour cream to my cornbread to make it moist and not so crumbly...

I am making this for my girl's low carb weekend.  Can I use 18 drops of Zero in place of the xylitol?  I think my basic question is whether or not the bulk of the xylitol is ever an issue and if so, in what type of recipe.

Yes 18 drops is correct Andrea ;) I have made cookies,cakes,pies,tarts,cheesecakes and ice cream with Zero and filler has yet to be a issue :)
