Hi, Kim. What is the carb count in the coconut flour? I don't have any to check the package. I was thinking that this recipe might also work if we used the basic pancake recipe as the sandwich part. Thanks for posting this. You've got my mind working on ideas related to this now.

Try it both ways because the muffin part of this was reallly good. Kinda like an english muffin. Coconut Flour is net carbs of 3 per 2 tablespoons. Hope that helps :)

Hi Kim, did you use 4 eggs in the muffins and 4 eggs on the muffins - 8 eggs total?

Ok, let me think through the coconut flour carb thing.
16 Tbsp = 1 cup
3 carbs in 2 Tbsp, so x8 for carbs in 16 Tbsp (1 cup), which gives 24 for one cup.
Divide by 3 because it used 1/3 cup in the recipe: 24 divided by 3 gives 8 carbs for the coconut flour.
Does that sound right?

Hey Sarah -yes - 4 eggs were used to make the muffins and then use another 4eggs to make the 4 egg rounds. I just scrambled them and shaped them in the frying pan with the spatula. Thee is a cool gadget on amazon that is a circle you sit in the frying pan to make perfect circles.
Owensmith - looks right but I am not certain. My mastercook program calculates my net carbs for me :)

There are other coconut flours that are lower in carbs.I actually found one that was a zero but I haven't tried it yet.Alex did.i love the coconut oil though! I use it to cook and for my skin! Great stuff ;)

I noticed this morning that Walmart is now selling coconut oil. That is nice! Hopefully, they will get almond flour sometime in the future! I know they sell Milled Flax Seed, too.

Umpa ~ I think you and I might be sisters! I use coconut oil all the time too. It's the only thing I use on my skin. Tropical Tradiitions is my FAVORITE!!!!!!!!!

Well Sis I love it! When i look at what I use to spend on lotions for my face I shudder! :D I like to put it on my feet at night too and put on socks.In the morning feet feel so good! ;)
