1 Minute Muffin Batter as Pancakes
(taken from original post in breads-page 4)
I just used the original recipe (Shihtzumom1)
Melt 1 T butter in a coffee cup or 1 cup Pyrex measuring cup.
. Mix in ¼ cup golden flaxseed meal
. ½ tsp baking powder (stir this into the flax seed meal gently with a fork)
. 1 egg
. Sweetener (to personal taste): 1 tsp xylitol
. A splash of heavy cream
Give it all a really good stir with a fork to be sure it is mixed together smoothly.
Spoon in onto a hot griddle or frying pan sprayed with Pam (I had to spread it around with the spoon because it didn't pour).
When the top looked almost cooked I flipped it and cooked the other side.
They raised up nice and fluffy.
Serve with butter & SF syrup.

These pancakes are amazing, my husband loves them and so do I. I have made them with bacon bits in them sweetened with sugar-free maple syrup, great combo and also with a little pumpkin puree and spices, unlimited possibilities to keep it interesting ;D

Congrats on the size 8s Izzet. I was excited yesterday to buy size B panty hose, not C or D or Queen size!! Sorry guys, I guess I should have put this on the girls page.

I have to comment on the pancakes they are my favorites made em yesterday for me and the wife she didn't get up in time I ate hers and cleaned all the dishes before she woke up ::) my bad. She enjoyed the coffee :D I offered to make breakfast she declined.
Oh and Izzet congrats on the panty hose's. Smaller clothing is always exciting guys or girls.

These pancakes are great ! I tried dropping a few blueberries and a little vanilla into the mix and it turned out pretty good.

Thanks for the warm welcome everyone. :) I tried sugar free hersheys syrup in the mix and a little cool whip on top instead of syrup and my husband loved them.

Oh, I tried this. Let me tell you, my plate will see this again. I actually like it better than regular pancakes. I don't like a heavy breakfast, but this is light. WAHOO FTS.

My cholesterol just spiked cause I think I was indulging in too much cheese. So, I know I can get it down by staying off certain products. So, saying that, I noticed this recipe has a 'splash' of heavy cream. What can I substitute for the heavy cream. Or, maybe just leave it out? Maybe just use water? Help!

Cholesterol spikes by themselves, are not that big of a concern.
Your a1c (sustained blood sugar levels) are far more important.
We know that cholesterol is not the problem.
It's inflammation of the arterial walls from elevated blood sugar levels.

Any liquid will work :) Just a thought though if you have recently been losing fat it will show up in your bloodstream and throw off your numbers. I read this on another site and asked my doc. He confirmed that it could make your numbers crazy.
