Family favorite holiday jello salad!
« on: February 02, 2012, 04:27:01 PM »
I was getting tired of my usual jello with whip and decided to see if I could recreate a family favorite. I have no idea what to call this. :) In my family, we always called it the "pineapple, cheesy goodness". LOL. My FTS take on it is a bit different (the original had gelatin, crushed pineapple, pineapple juice, cheddar cheese and whipped cream) but just as good!

I take one cup of sugar free jello (I like strawberry flavored), add two tablespoons whipped cream (I like to whip my own and add a pinch of xylitol and drop or two of coconut or vanilla extract), a tablespoon of unsweetened shredded coconut and a tablespoon and a half (or so) of shredded cheddar cheese. Mix and enjoy!

Cheddar cheese in jello  :o  Gotta make this one just to see. Can't wrap my head around it Alicia :D For flavors like banana, mango, pineapple and bananas (the wicked high fruits) I use emulsions. They are like extracts but alot stronger and cheaper.I can get them at Ross Clothing store where they keep the coffees for about $2.99 each.Online they are $4.99A little goes a long way. ;)

Cheddar cheese in jello  :o ...

My wife tells me that when she was a young girl, her mom used to put peas (or other veggies) into jello. :P

Her mom also used generous amounts of dill in ALL egg dishes.
To this day, my wife can't stand dill!

Hi Alicia  Wow that sounds a lot like a jello salad my mother used to serve at most of our holiday dinners...LOL  I just love this stuff.....This was hers:

1 lg box of lime jello
1 container of cool whip (2 cups)
1 can drained crushed pineapple
1 cup chopped pecans
1 cup of grated cheddar cheese

When I get hungry for it I just throw some pecans and cheese in my jello and add whipped topping  Yummmm  ;D

That sounds very similar, TooSweet! :)  Umpa, you've got to try it to believe it. :) I prefer the "fancy shredded" cheddar to the regular grated style. I like the texture better and there's less cheese flavor. The shredded coconut makes up for the lack of pineapple....but I bet adding the emulsion would be good in the whipped cream instead of vanilla or coconut extract! I'm going to have to make a Ross run! :)

Mouseissue, I have an old jello brand book of recipes from the 70's that my mom gave me that is FULL of stuff like that! Eww. Gelatin molds full of veggies....just sounds (and looks) wrong!

Jello SALAD.  I think one of the most masterful marketing campaigns in the world was in the '50s when our moms and grandmothers were convinced that sugary jelatin makes salads.  Sugar-free is a great improvement, but it isn't SALAD.

Our family enjoyed the jello salads  :D.  When mom would put canned fruit in jello, it was  dessert.  But if the jello had shredded cabbage and carrots in it that means it went with the main meal. Go figure.  :D
Can't wait to try your recipe

My grandma used to make a similar one with lime jello, pineapple, and cottage cheese on top.
