I don't have my ACV yet, Beebs, but what about putting some in ice tea flavored with a S/F berry syrup, or some really strong, sweet diet drink - crystal light's red grapefruit is strong, at least to me, or I've seen a fudge diet soda in the stores.  Or on salads as mentioned above...  Maybe Bragg's has suggestions on their website...

If ya' can't find a recipe to your liking, you could always bathe in it as metnioned above by IZZ - but you won't catch many "flies" this way!!!  ;D hee hee  GET IT??!! ("You'll catch more flies with honey, than you will with vinegar") ;D ;D ;D

I've been looking for this at the groceries with no luck.  I was getting ready to place an order with Netrition and discovered they also carry it in two sizes!!  Looks like I'll be drinking with you in a few weeks!!  ;D ;D ;D

CHOCOLATE-STRAWBERRY PANCAKES

Paula's post made me hungry for chocolate pancakes...  I made up a batch of the original OMM batter, used Golden Flax so I could see the strawberries,  added 1 T. Torani’s S/F Chocolate Syrup, 2 T. Hershey’s S/F Chocolate Syrup, and a few sliced strawberries - had to add some water to batter as we like our pancakes a little thinner.  These were really good “naked” :o :o, but DH got out the Reddi-Whip and Hershey’s syrup which made them heavenly.  Definitely having these again this week-end!!  ;D ;D

PUMPKIN OMM

1 t. oil
1 egg
2 T. canned pumpkin
1 T. Sugar Free Torani’s Caramel Syrup
½ t. baking powder
½ tsp. xylitol
¼ C. golden flax meal
¼ - ½ tsp Pumpkin Pie Spice
A few pecans/walnuts - optional

Mix all ingredients really well (I use Magic Bullet/Ninja but not necessary) except the nuts and pour into a microwave safe container.  Add nuts on top and mix in with a knife, fork or spoon – to get the nuts down in the mixture.  Usually I only have to nuke for 57 seconds on my microwave, but this was so moist, it took over 2 min – cook until the center is done and springs back.

I made “bite size” muffins for the guys working on our window – nuked them in small cups that used to hold lunch-size applesauce.  Put a caramel cream cheese topping on them made with Caramel Syrup and Temp Tee Whipped Cream Cheese (0 carbs) – mmmmm!  ;D ;D

Sorry to hear about your cupcakes, beebs.  When I made pumpkin OMM (one minute muffin), I had to cook quite a bit longer because of the pumpkin...

Beebs - did you notice any difference in your cupcakes with the dry egg white?  I tried them in the OMM, but the muffin seemed flater/denser... ???

Dinner Recipes / Shrimp Creole

SHRIMP CREOLE

1 cup chopped onion             14 g
1 cup chopped celery              3g
2 med green peppers, chopped              12g
2 cloves garlic, minced                  0-2g (my jar of minced = 0)
¼ cup butter or oil

1 can (15 oz) low-carb tomato sauce       2g (8 carb, 6 fiber)
1 cup water
1 tsp salt (I use Morton’s Nature’s Seasoning)
1/8 tsp cayenne pepper, or to taste
2 bay leaves, crushed
Dry Italian seasoning – I throw in about 2 T.

14-16 oz. shrimp              0
3 cups cauli-rice             1.5 (1/2 cup)
Parmesan/Asiago Cheese

Cook and stir onion, celery, pepper (I use red/orange/yellow - don't like the green) and garlic in butter about 5 min. or until tender.  Remove from heat and stir in tomato sauce, water and seasonings.  Simmer 15 min. (add additional water if needed).  I put the above in my pressure cooker and cook for 20 min, to infuse flavors.  (Prior to the pressure cooker, I cooked it on the stove.)  Add shrimp, heat to boiling, cover and cook over Med/Lo-Med. 10-20 min. or until shrimp is pink.  Serve over cauli rice/potatoes or tofu pasta.  Sprinkle with cheese.

**I make just the sauce a day ahead so flavors meld - a big improvement in flavor.  When I want to serve it the next day I heat sauce, then add the shrimp and cook.  Many times, I will make extra sauce and freeze for future meals.

Serves 6 – if you’re Oinkers like us, then it only serves four!!   ;D ;D
Net carbs = 32.5 (5.4g each for six servings/8.13g each for four servings).

Desserts and Sweets / Pumpkin Custard

Pumpkin Custard

2 oz. cream cheese          0 carbs
2 T. pumpkin (not pie filling)      1 ½ carb
1 egg               1 carb
1 T. Torani or DaVinci Caramel           0
¼  t. vanilla            ?
½  t. xylitol            0
½  t. pumpkin spice         ?

Soften cream cheese, stir, add egg, and mix well. Add remaining ingredients and mix well. Nuke for approximately 2 min or until set in the center.  Top with Redi-Whip, sugar-free syrup or both.  ;D

You can mix and nuke in the same dish, measuring cup, etc. – I just used a cereal bowl.

The pumpkin flavor was subdued, not strong – more like a pumpkin custard.  Probably adding more pumpkin and/or spice would make it taste for Pumpkin pie-like, but I was trying to keep the carbs down.  My guesstimate carb count is 2 ½ - 3 carbs ~ not sure on the vanilla and spices.

An afterthought...I bet some pecans on, in, or under would help it POP...

...HAPPY FALL...

Really enjoyed it - thanks again!  :)

P.S.  How many carbs in a slice of the crustless Pumpkin pie?  About 4 carbs?

Last week I bought a Giada De Laurentiis nonstick fry pan - the paperwork said not to use a spray coating (use olive or peanut oil if necessary) and not to cook on heat higher than medium.  I spray my older frypans because food sticks (like my Katary Pizza), but maybe thats why it sticks cuz I use Pam??  :o :o

Guess I'm confused... (nothing new). I thought the reason you couldn't get the pizza out was because you did not have a non-stick, non-teflon pan.
