I love salmon and avocado. This recipe melds the 2 together in a way that you'll find delish! The lime juice actually "cooks" the fish so don't think you're eating it raw. This makes a wonderful lunch sure to please you and your guests!

Ingredients
1 large Florida avocado cut in half, seed removed
1 cup chopped fresh raw salmon
1 teaspoon diced jalapeņo pepper
1 tablespoon chopped onion
1/4 cup chopped tomato
2 tablespoons fresh lime juice for filling and 2 tablespoons additional lime juice to coat avocado
salt and pepper to taste
Sour cream optional
Directions
1- Mix all the ingredients except the avocado and the additional lime juice in a bowl and let rest 15 minutes
2- You can skin your Avocado or leave it in its skin, coat the fruit with lime juice and season with salt and pepper
3- Taste the filling and adjust salt, pepper and lime as desired.
4- Generously fill the fruits cavities with the filling and serve with sour cream if desired.
