Cooked my 1st Spaghetti Squash tonight. One squash makes a lot!
Alfredo sauce- 1 cup light sour cream, 1/2 cup mozzarella, 1/4 cup Parmesan, salt, pepper, garlic (optional). Cook medium/low heat until smooth and creamy.
I poured some over individual serving of squash and added sauteed chicken. Pretty good.

I have not tried the squash as pasta ,that looks good gonna have to try it !

Thanks all! I only like to cook easy things :) I had lots of squash that I didn't mix with Alfredo so tonight I mixed it with a little mayo, salt,pepper and leftover chicken (diced up) and a little green onion. Yummy, I will have this again ;D

We are doing a squash video over the weekend .I get requests all the time on how to cook it. ;)

Umpa they have a wonderful tool ( I love little gadgets LOL) at bed bath and beyond that makes it easy to make "spaghetti" out of squash. Have you seen these?? This baby is sharp (watch those fingers!!) but makes julian slicing a snap!! You can make some pretty garnishes with them too ;D ;D

I just use a fork and the spaghetti squash comes right apart.

I have cooked the spaghetti squash once, and was totally AMAZED at how it comes out with a fork....looking like spaghetti! I just laughed! I had no idea this squash even existed prior to FTS. Then I discovered that they actually serve it as a side in our local Ruby Tuesdays.

Very cool toosweet! Bed,bath and beyond has the coolest kitchen section! Doug even likes to go there.Its the only place I could find the mini tart pans I needed for minature pecan pies ;)
