Title: Jenny's Better Than Boxed Low Carb Pancakes

I said I'd try this recipe, then didn't have any whey protein powder, but I had and used soy protein powder and a splash of vanilla and it was wonderful! It was kind of thick, so I used the water. It's a keeper! And one large pancake was enough to satisfy and fill me up. I can't find our thread about this, so here's the original recipe:

JENNY'S BETTER THAN BOXED LOW CARB PANCAKES

  2 1/2 tablespoons  vanilla whey protein powder *
  1/2 teaspoon  baking powder (see update below)
  1  Pinch  salt
  1  egg
  1  teaspoon  oil
  2  teaspoons  water -- optional (see update below) **
  Oil or cooking spray -- for the pan

Whisk all of the ingredients, except for the water and cooking spray, in a small bowl until smooth. Add up to 1 tablespoon of water if you'd like a thinner batter. Meanwhile, lightly grease a small nonstick skillet with oil or cooking spray and heat on medium. Pour in the batter and tilt the pan to spread the batter evenly over the bottom of the skillet. When bubbles appear all over the pancake and the batter on top looks like it's starting to set up carefully work a spatula around the edges and then under the pancake to flip it over. Cook until the second side is lightly browned. Don't let it get too dark or it will taste a little bitter. Serve with butter and low carb syrup, if desired (not included in the counts).

Makes 1 large pancake

* The counts are based on using Body Fortress brand whey protein powder.

** Jenny's original recipe called for 2 tablespoons of water plus another tablespoon of Da Vinci syrup. The batter came out much too thin with all that liquid. As an experiment, I made one pancake using just 1 tablespoon of water and then a second pancake with no water at all. Although the one without water was more sturdy and easier to flip over, I think I liked the consistency of the pancake with the added water. The problem is that you can't use the thinner batter to make multiple smaller pancakes because it will spread too thinly in the pan, will end up more like a crepe and will be very difficult to flip over. I think that next time I might try adding just a teaspoon or two of water as a compromise.

Per Pancake: 179 Calories; 10g Fat; 18g Protein; 3g Carbohydrate; 0g Dietary Fiber; 3g Net Carbs

This is really makes me happy! Good recipe SarahC!  I have questions to ask you.

Have you tried Vanilla Whey Protein yet?  I have a chocolate kind but needs to buy another one for vanilla.  That Whey Protein is 7 carb, 3 fiber, 3 sugar but not sugar alcohol so subtract carb and fiber is 4 net carb.  I think that one is too much so since you already tried soy protein powder - what is the name of brand was it and where did you get that at?  Also about splash of vanilla - I'm not sure what you mean but are you talking about "Pure Vanilla Extract"??

Emmitt any soy protein powder will work just make sure its 0-2 carbs.A splash of vanilla extract is 1 1/2 teaspoons. Where do you live?

I don't use a skillet.  I preheat my waffle maker and just before pouring the batter on the waffle maker I spray both sides with a light dusting of the cooking spray.  The batter has to be thin enough to pour but not run over the sides, pouring directly in the middle then close the top.  As long as your baking powder is not expired (LOL) the pancake is now the lightest fluffiest waffle! 

I had this for dinner tonight along with my crispy bacon and a couple fried eggs.  A really great low carb breakfast and so very filling.

Topped with butter and 1 T Joseph's Sugar Free Syrup (0carbs)

Thanks Tony and Umpa!   Been gone so much with new 5th wheel.  Bought the thing in August.  Took first trip in October to Myrtle Beach 2nd trip to Bay St. Louis, MS casino, 2 more trips in December (went to Florida hoping to be warm LOL) and another trip to Florida in February and just got home 2 weeks ago.  Then had dad's 82nd birthday and family from out of state.  Only got to see TooSweet a couple times and now she's traveling  :-[

I have stuck to FTS as best I could, glad I could pre-cook foods before we traveled and still gained some but now that we are home hope to drop the 5 lbs I gained this last trip.  Maybe by my anniversary (FTS in July that is) I can finally reach my goal.  Just got to tighten up and eat as low carb as possible.  Also looking forward to opening the swimming pool.  Have stopped buying those chocolate Russell Stover SF candies...those have been my downfall.  Haven't had any for a week now and am craving chocolate.  Using WF chocolate syrup instead LOL!

Gonna go back to basics; boiled eggs, meat and cheese wraps, cheese crisps and lots more water.  Cut back on combo meals (one dish meals for convenience that probably have more carb creep than I realize). 

Have missed all of you guys, but as you can see, we've been gone and traveling and the wifi's are pretty poor lately.  Larry has promised to buy me a "booster" and antenna for the camper so I can use the internet without having to pay for our mifi which costs us $90/month.  I save it for paying bills and checking email.

Anyway.  That's my story LOL.  Looking forward to getting caught up on new recipes and information!

I use Hemp protein powder, pancakes come out like Buckwheat. 12 carbs -12 fiber, and they taste great.

I don't understand the bottom part of this recipe...do you put 2tsp of syrup into the actual batter? And what does it mean when it says 1 tsp of water right before cooking? Do you mean you throw that in after it's all mixed right before it's in the pan, or do you mean you put it in the pan? Sorry...I get confused on this stuff easily sometimes

This recipe was posted by one of my moms who doesn't come on the forum very often.   I'm pretty sure what she is saying is to add the syrup into the batter and hold the tsp of water to mix in just before you cook it so that the batter remains thin.  Here is where she got the original recipe http://genaw.com/lowcarb/better_than_boxed_pancakes.html (http://genaw.com/lowcarb/better_than_boxed_pancakes.html) reading it may help to clear up your confusion.  In the original she talks about experimenting with different amounts of water in the mix.  I think you will see that Suz just swapped out some of the water for sugar free maple syrup.  Hope this helps   :)

Awesome! Thanks for the help on that. I think I may nix the syrup/water addition altogether...most of those sugar free syrups have sweeteners in them I can't tolerate. Thanks again!

Okay...quick question before I make these...do they come out eggy? I cannot stand the taste of eggs...I gag and puke it up immediately...totally icks me out, and every "baked" or cooked or "bready" low-carb product I've made tastes very eggy :\ how does this one taste? Is it floppy and rubbery like an egg product is? Even the OMM came out eggy to me so I just left out the egg on it...but how does this come out? TIA!!!

Thanks Umpa...I actually have. I made it alot the first time around when I was a vegan...minus the egg. This time around I tried it with the egg and it tasted really eggy to me :\ I couldn't finish it, it made me gag :( I hate the taste of egg and it came out very eggy...I think I will just keep on with it without the egg...when you take out the egg it has no carbs, as long as I use flaxseed! It doesn't rise as much but it doesn't taste eggy either :D

The only homemade syrup I make is actually a H1N1 Flu preventative but its wicked tasty!
One cup dried elderberries
3 cups water
 one bottle sugarfree honey(i like the one sweetened with xylitol)
Put elderberries in pan with water bring to a boil then simmer for 20 minutes.
let cool and mash.strain. then pour in honey.
My grandson loves this!He went to the doctor and he told the doctor he didn't need his medicine his umpa makes his medicine!

I found this one. I have all the ingredients in my kitchen:
Low Carb Maple Syrup

1 T maple flavor
2 cups water
24 drops liquid F2S Zero Sweetener
24 drops Now Brand liquid Stevia
1/2 t guar gum (thickening agent, found in health food store)
 
Nutrition Information:
Recipe makes 1 Cup (32 Tbsp)

    
Directions:

Heat water with sweeteners and extract till boiling.

Take off heat and stir in guar gum to thicken.

Cool and store in refrigerator.
