New twist on low carb deep fried fish n fries

Umpa and I enjoy deep fried fish n fries about twice per month. My normal procedure is to dredge the food in beaten egg before coating it with ground hot and spicy pork rinds. Last night I added a new ingredient, sour cream! The food was more savory as well as more crispy.

Low Carb Deep Fried Fish n Fries

Ingredients

2 large white fish filets cut into fish sticks (I used grouper)
1/2 eggplant peeled and cut into fries
2 eggs beaten
2/3 cup sour cream
salt and pepper
mayonnaise
dill pickles
ground pork rinds
peanut oil for deep fry

Directions

1-beat the sour cream in with beaten egg until completely incorporated
2-place the food into the bowl of beaten mixture and coat all the food well
3-toss a couple dill pickles into a food processor and chop
4-remove the chopped pickles and pat dry well with a paper towel
5-mix 1/2 cup mayo with the pickles to complete your tartar sauce
6-place 3 cups of ground pork rinds in a large plastic bag
7-piece by piece drop the wet food into the bag shaking as you go along and removing as they get coated
8-pour a couple inches of oil into your fry pan and heat to 375 degrees
9-fry the food till golden brown and serve with tarter sauce

Super Yummy!The breading was super crisp and thick :)

oh yum, i got to have some fiber with this so I'd either add flax meal with the pork rinds and/or some veggies on the side.

That's a good question sunshine bc I don't eat seafood but love chicken

Same recipe on any fried foods except onion rings. Onion rings require a shake in dry Glucomen powder before a wet dredge. My fav oil for deep fry is peanut oil but it's more expensive than vegetable oil which also works fine.  8)

Hmm no vegetable oil left, can't get peanut oil, well only if I buy 5 gallons, lol. 
I've only got 1 lb coconut & big bottle of olive oil 

Got pork skin w/ lots of fat under it, in my freezer too.
