Title: The best low carb pancake I ever tried.

Coconut times three. 3 eggs beaten ,3 tablespoons coconut oil, 3 tablespoons coconut flour , 3 tablespoons coconut milk (unsweetened). couple drops sweetener, 1/4 tab. baking power, some salt. pinch of coconut if desired. Melt oil, mix all together very well cook on Med. temp. Yummy yummy. ;) ;) ;) ;) ;) ;) ;)

I made these again this morning too! But I reduced the 1/4 tab. baking power to 1/4 TSP and they were still great! ;D ;D ;D

Never had coconut flour. I have almond flour, will try with that until i can get some coconut. Thanks Jetfan. These look great.

I substitute almond for coconut flours often. It's usually just as good, and has fewer carbs! ;)

She loved them! She never really liked flour pancakes, liked my buckwheat pancakes better, but now really liking low carb pancakes best.

Im always on the lookout for a good low carb pancake recipe but have yet to find a recipe I really like. With so many eggs to such a small amount if flour, do the coconut flour pancakes taste eggy?

Have you tried my 'downunder pancakes' not at all eggy and so easy to make?
