Title: Paula Deen's Ooey Gooey Butter Cake..

Paula Deen's Ooey Gooey Butter Cake
Cake
1 (18.25 ounce) box yellow cake mix
1 egg
1/2 cup (1 stick) butter, melted

Filling
1 (8 ounce) package cream cheese, softened
2 eggs
1 teaspoon pure vanilla extract
1 (16 ounce) box confectioners' sugar
1/2 cup (1 stick) butter, melted

Preheat oven to 350 degrees.  Lightly grease a 13x9x2 inch baking pan.

In the bowl of an electric mixer, combine cake mix, egg, and butter and mix well.  Pat into the bottom of   prepared pan and set aside.

Still using an electric mixer, beat cream cheese until smooth; add eggs and vanilla.  Dump in confectioners' sugar and beat well.  Reduce speed of mixer and slowly pour in butter.  Mix well.

Pour filling onto cake mixture and spread evenly.  Bake for 40 - 50 minutes.  Don't be afraid to make a judgment call on the cooking time, because oven temperatures can vary.  You want the center to be a little gooey, so don't bake it past that point!

Remove from oven and allow to cool completely.  Cut into squares.  Just remember that these wonderful little cakes are very, very rich, and a little will go a long way.

This one and dumplings (as in Chicken and dumplings) are two things I would REALLY love to have as long as they are FTS friendly.

You can have all the wishes you like Alex! :) Which cookies?? Right now my kitchen is closed because we have a large circus tent over the house!!! :D We are being tented for termites! The ooey gooey cake is #1 on my list soon as the kitchen opens back up! :D

I cannot help but notice how many recipes for low carb sweets get posted.

Now don't get me wrong... I love 'em. So keep them coming!
But we need to be careful not to overdo them (i.e. eat them too often).
For many of us (like me), that would be VERY easy to do. ::)

Me to Tony..LOL  I have such a bad sweet tooth.  There are a lot of other really good recipes on here as well.  I need to try more of them now that the Hubs is more willing to eat what I am  ;)  He is pretty much a meat and veg kinda guy though  ;D ;D

At the moment, I cannot think of anything that I miss for which we do not have a replacement.

Doug will post a picture.You can change the flavor by changing the extract in filling.I think lemon or orange would be great! 15 carbs entire recipe! Lets see Paula Dean do that!We should have a Umpa/Paula throwdown! :D :D

Paula Deans Ooey Gooey Butter Cake( actually more like bars)
Preheat oven to 350
grease 13x9 inch pan
Ingredients
2 cups almond flour
3 teaspoons baking powder
1 teaspoon salt
Mix together in bowl
Add 1 egg
Add 1/2 cup butter or butter flavored Crisco
Add  48 drops zero
Mix well spread out in bottom of pan will be thick
In a bowl mix
Filling
1 (8 ounce) package 1/3 less fat cream cheese, softened
2 eggs
2 teaspoon pure vanilla extract
24 drops zero
1/2 cup (1 stick) butter, melted
 Pour filling onto cake mixture and spread evenly. Bake for 40 - 50 minutes. Should be gooey in center. Cool completely before cutting into squares. Best overnight in Fridge.

I made this last night.  It was good last night, but it was awesome today!  Chilling it overnight made it even better. My 16 year old son loves it, too!

Hmmm I'm not sure what I did wrong but mine came out a bit salty  :'(   I've looked back on the recipe to see what I might have done and the only thing I can think of is that I used butter instead of the butter flavored Crisco.  Of course it was salted butter too....LOL  "Face plant"  I should have been thinking and reduced the salt in the recipe.   :-\   If you are going to try this be careful.....  It was good enough to warrent a retry but sadly this one went in the trash  :P :P

Hmmm I don't know why mine was so salty then....I'm sure it was operator error....LOL  I bet I doubled up on the salt and didn't realize  ???  I can tell it will be wonderful once I get it sorted out.  The topping is wonderful, it's just the bottom crust is way to salty  :P  I'll try it again once I get more ingredients in the house. 

I was thinking this would be really good with maybe lemon flavoring to replace the vanilla....or topped with strawberries....Oh yummm

Funny you say that Umpa....I sprinkled sugar free chocolate chips on mine...really makes me sad that the crust came out so salty  :'(   Like I said though...the top is yummy

I like a lot of flavor!  ;) My favorite bar cookie is still the Magic Bars I did in ask umpa.Well, the lemon squares were pretty good too but better with the Zero no tummy issues :D

Mine came out salty as well. Used the amount called for, with unsalted butter. I wonder if it depends on the kind of salt used? I use sea salt.

I think I will be making it again only use 1/8 or 1/4th teaspoon.

Umpa, I want to try this cake, because the other two I tried are awful, the chocolate cake came out bitter and floury tasting, and another one I tried came out eggy :\ so now, because of the two nasty cakes I made, I'm low on ingredients and can't afford to get more right now, can I sub the almond flour for coconut flour? And how much would I use if I do? Also, can I sub the zero for erythritol? And if so, how much would I use? I don't have Zero and my ez sweetz is gone, and I don't have enough almond to make 2 cups, all I have is coconut flour...thanks in advance! I'm excited to try it :)

Taby I'm afraid you may not like this one because it calls for cream cheese.  I'm not trying to discourage you from trying it, but I remember your dislike for the taste of cream cheese my friend.  Why did the others go wrong?  What recipes did you try? 

If you do try one and exchange for the coconut flour do remember that it takes much less than other flours.  You will also have to increase the eggs and liquid.   ;)  For every one cup of flour called for you would only use 1/3 cup of coconut flour.  Double the eggs and add some extra liquid.  It helps also to add in a touch of xanthan gum to help hold things together.  Save your liquid for last and add a little at a time until it feels right to you  ;)  If you google coconut flour conversion you will see what I mean  :)

The 48 drops would = 1 cup of xylitol or sugar substitute equivalent.  Keep in mind that erythritol isn't as sweet as xylitol so you may need to add in more to your tastes.  Hope I have helped if only just a little.   ;D

WOW I didn't know all that :) I was going to omit the filling :) pudding isn't vegetarian ;) and yes because I hate cream cheese I was going to just make the cake and skip the filling! The other two I tried was Doug and umpa's chocolate cake with the chocolate cream cheese frosting...I made a different frosting, but the cake came out bitter and floury...I think I know why, the recipe called for only 1/2 tsp or tsp of sweetener...yeah not enough for me...everyone that tried it here hated it :( so I just need to add some erythritol next time. I actually had to throw the whole thing away :( the other was a recipe I got from Pinterest...it was vanilla, it called for 8 eggs and 3/4 cup of almond flour....as you can guess, it tasted like a sweet quiche :\ soooo frustrating. So I'm going to try one more cake recipe and then I'm giving up if it doesn't work right :\

In that case I hate to say it but I would choose a different recipe.  Because the "filling" part is meant to be baked with the cake and not put on as a frosting so to speak, you will change the structure of the end results.  My guess is it will probably come out extremely dry and crumbly.  Baking is basically a chemistry project...if you don't get the right components....it just fizzles out. This is why Umpa will warn that you should make the recipes as written.  When you sub things and or leave things out the results won't be the same.   I also find that when using erythritol that I need to mix it with some other sweetener to get the results I am after.  When is is supposed to be sweet....I want it sweet.  So I always mix it with something like stevia or sucralose for instance.  The erythritol gives me the bulk and the other the sweetness. 

I'm so sorry your recipes came out bad  :'(  I can't imagine a sweet quiche  :P :P  Haha  I think my first flop I made out of my low carb recipes would be brownies....oh my goodness those were bad   Ha!   Very bitter and not sweet at all    :P  :-\

I had planned to tweak it a bit.  I'm a pretty decent cook and baker myself...I do community cooking. I cook for people in our community and it's not unusual for me to be feeding 8-12 people on any given night :) When I was baking the other cakes, I just was distracted by my child. It doesn't matter now though, because after speaking with my nurse and doctor, and because of recent digestive issues, I'm going back as a vegan again and I am SO excited! I feel SO much better as a vegan than vegetarian, so no more dairy or eggs for me ;) so I'll be tweaking the cakes to be low carb and vegan ;) it's not easy but I'm pretty darn good at it. The only thing I'm not "good" with persay, is the sugar subs like erythritol...I've not baked with it much, although when I have I find it provides enough sweetness for me :D I don't need to combine any other sweeteners, I'm just not good with converting the right amount of almond or coconut flour and the right amount of erythritol because I haven't done it a ton...that's where the weakness comes in...but it doesn't really matter a lot now because as I said being vegan again, there is no frosting that is vegan and low carb...so I'll just stick to muffins :)

Erythritol measures about 1 1/3 cup to equal the sweetness of 1 cup of sugar.  But if it sweetens enough for you like you said you might could try cup for cup and see if it is sweet enough.  I add the other sweeteners in because I like the taste of the finished product.  Sometimes too erythritol will crystallize itself.   :-\  I like crunchy things but not like that  Haha  There are tons of recipes out there on the web using coconut flour and even already converted for vegan.  I tell my daughter that Google knows EVERYthing  ;D ;D  Haha   If I can help just ask my friend.  Congratulations on the scale still heading in the right direction  ;)
