MONTEREY BEANS & CHEESE

I converted the ingredients to low carb foods but don't know the carb count. Can you help me there?

MONTEREY BEANS & CHEESE

2 slices bacon
2 ripe tomatoes diced
1/2 medium onion sliced
1/4 c. tomato juice
1/2 green pepper diced
1 t. chili powder
2 c cooked black soy beans
1/2 t salt
1/2 lb shredded cheddar cheese
dash pepper
Cooked cauliflower rice

Fry, drain and crumble bacon. Set aside. Saute onions and green peppers in bacon grease til tender. Drain.
Mix all ingredients in clean skillet (except rice) and cook slowly, stirring constantly, until fully blended and cheese melted. Serve over hot rice.

It's the little things that make a big difference...speaking of black soy beans! I am still visiting my parents in Florida, and I went to the health food store to find unsweetened coconut. BUT, while walking down the aisle...I saw 5 cans of black soy beans (which I cannot find anywhere near where I live) and I was so excited. The lady in the store thought I was crazy, but she doesn't understand! I bought all of those cans. YAY!!!

Help, WHERE do you find black soy beans?  I haven't been able to find them anywhere and I am missing my beans :'(

Hi Paula, I haven't found them locally yet but I get them from www.netrition.com ... I love them.. they are wonderful!!

I found them on Friday at a store called "Goodness Grocery" in Atlanta.

I dumped a bag of black soy beans in some water a stick of butter and some ham chunks. I let them cook for about a day and a half!
