Title: Spicy Zoodles

I roasted a chicken for dinner last night and used the leftover pan juices to saute some zucchini noodles. It was SO good, so simple and fresh! I think I've found my new favorite thing. I ate it too quick to take a pic. Next time I make it I'll get one to post.

Spicy Zoodles
2 zucchini, cut or spiraled into noodles
1 minced clove garlic
Fresh cracked pepper to taste
Crushed red pepper to taste
Thyme to taste
About 4 Tbsp juices from roasted chicken or chicken stock

Throw everything in a pan and Saute for 2-3 minutes until zoodles are slightly tender.

Yum!

I was thinking to cook meat for hours in the crockpot, then strain the fat/pieces out of the leftover juice :-)
