This is such a delicious savory recipe. It's filling and extremely satisfying  ::)

FAT TO SKINNY Low Carb Shepherds Pie

Olive oil
Ground beef
Chopped onion
Ricotta cheese
Shredded Cheddar cheese
Shredded Mozzarella cheese
Cauliflower
Butter
Mayonnaise
Salt & pepper to taste
Rosemary twigs

Heat one tablespoon of olive oil in a skillet.  Brown ½ cup of chopped onions and ¾ pound of crumbled ground beef until cooked.  Salt and pepper beef to taste and strain, and then set aside. In a mixing bowl, combine one cup of ricotta cheese, ½ cup of shredded cheddar cheese, and ½ cup of mozzarella cheese. Place ½ of the cooked ground beef and onions into a casserole dish.  Layer, on top of the meat, ½ of the cheese, then cauliflower (“mashed”) potatoes (recipe below),then  the remaining meat, and then cover all of it with a final layer: the remaining cheese. Place the rosemary twigs on top.  Bake uncovered in 350-degree oven for 40 to 45 minutes.

Cauliflower (“mashed”) potatoes Prepare “mashed potatoes” by steaming a head of cauliflower in a couple of inches of water until fork tender. Drain cauliflower and place into food processor with a chopping blade. Add two tablespoons of your favorite mayonnaise, one tablespoon of Benacol spread or butter, and salt & pepper. Process until smooth.
