Title: Really Discouraged!!!

So, I just finished reading the book. It makes sense. I have the self-control, the will power, and now, the knowledge, what's the problem? Most of the recipes are meat and cheese...and as I've said before...I'm vegan. What am I going to do? I get most of my vitamins from fruit...vitamin C for one is really important for me because I have a compromised immune system. I don't know what to do, I'm at a loss and now am scared to eat most of the food I had been previously eating because it's full of sugar and carbs...and to top if off, I live in a really rural area. Not much to chose from in way of food stores and specialty items...if I can afford to order low carb or carb friendly food, that is actually vegan also, what will I eat until it comes in? Will they leave packages at your door? Because I work in another city during post office and business ours with only a 30 minute lunch and it takes 40 minutes to get to my house from my job. I feel extremely discouraged and defeated...as a vegan, I have no clue what to do now....I can figure out the net carbs, but what am I going to eat to actually be satisfied and full? What am I going to snack on? I usually resort to fruit...can I still get enough vitamins? SOOO worried.  :'(

Are you able to eat the LaTortillas?   You can make veggie wraps with them.   How about the GG Bran Crispbread?.  Things with fibre help fill you up.  There are also the black soy beans to make vegetarian chili.

As far as ordering things.  Why don't you use your work address as the shipping address.

I can't use my work address because I'm just an intern, I'm in grad school in my last intern ship, plus we have to be out of our building by the 28th, we are moving. The GG bran crisp bread is vegan, but I don't think the LaTortillas are. I don't eat a lot of soy beans because my digestive system has a hard time digesting them, although I do eat black beans...but they're high in carbs I think, and I love love love Ezekiel bread...but it's high in carbs too, and my favorite item is balsamic vinegar...I use it on salad with EVOO...but it's got a good amount of carbs too...this is depressing.

I'm an intern at a foster/adoptive home, and I bring my food everyday, so on the plus side, I'm used to cooking...been making most of my food from scratch for the last year, problem is, It's all high in carbs  >:(

Have it shipped to a friend or relative's address.  Or have it shipped to your post office for you to pick up.  If it comes by courier have it shipped to the local depot for you to pick up.  Where there is a will there is a way

I have plenty of will, I've lost 50 pounds when I became vegan, being a vegan take tons of will, I promise you that...but I work past the post office hours, I can have it shipped to my mom's house, but the GG bran is the least of my worries. I'm hoping Doug or Umpa can help guide me to some vegan food or meal plan ideas. I felt this way when I became vegan, so I know there is a way this can work, I just can't find it...I need help seeing it. Will I be able to get my protein and vitamin requirements met by following this eating lifestyle change? I usually get my proteins from rice and beans, Ezekiel bread, and some soy and nuts...but most of that seems high carbs...what can I do? I know that Doug and Umpa have some answers I can't see...and I'm hungry and haven't eaten today because I don't know what is okay to eat...EEEK...

Make yourself a stir fry with a variety of vegetables.  If you have cauliflower you could make cauli rice (just use a hand grater if you don't have a food processor) and put your stir fry over that.  Have a salad on the side.

AWESOME! Thanks! I do have a food processor thankfully! It's tiny, and not a great quality one, but it gets the job done! Is soy sauce okay? Does anyone have any oil based dressings they like so I don't have to resort to red wine vinegar and oil all time? I saw in the book spinach has carbs, I usually eat spinach, seems like if I eat only veggies that it will add up quickly? I could have misread something though! Thanks again ShihTzu mom1!!!

Just check out the list of veggies on page 106 of Doug's book.  All veggies have carbs (spinach is pretty low) and try to pick out the lower carb veggies (carrots are high).  Get a notebook and start a food journal.  Plan your meals ahead of time so you don't go over the 20 net carbs.   There is also a FTS Sugar & Carb Counter e-book you can order that has a more extensive list.  Can you eat nuts and seeds?  I eat unsalted pecans, almonds and walnuts as well as roasted unsalted shelled pumpkin seeds and sunflower seeds.  Hope this helps.

ShihTzu mom...thanks! Yes, I do eat nuts, I thought they were too high in carbs though? I will check again...I saw that veggie list, that's what sent me into cardiac arrest LOL I saw the veggies have carbs and it's like whoa...how can I get full when everything I eat has carbs?

Emerald Cocoa Roast almonds are really good and only 2 net carbs per serving. They come in 100-calorie packs, which really keeps you in line so you don't eat more than you should. They have plain, too, but I love the cocoa ones.

Yes, it helps a lot, now I just have to go through and find which ones are vegan...seems like many, many of them are! Which is great. Here's what I figured today...my husband planned something special for me, before I was going to start this dietary eating plan, so I am starting tomorrow, but I paid close attention to how many carbs I ate, and I tried to imagine that food in sugar quantities...and what I discovered is that I have been eating approximately...you won't believe this...somewhere between 215-300 carbs a DAY. EEEEEEK that's what I'm FAT. I'm 5'9 and I was 285 pounds...now I'm 235 but still, that's why I'm FAT. I'm probably eating like 6 bowls of sugar a day  :o yikes. Thanks again Doug!!!

Hmmm, for starters, I know I can eat veggies...but the carbs kinda add up quick huh? I could have a salad, but can't find good dressing that's low carb and I don't want to burn out on vinegar and oil (especially since my FAVE Balsamic is high carb :( ) but don't know what else to put on it. I have some semi low carb marinara at 4gr for a couple TBS but that's not much, and I have some almonds and peanuts and peanut and almond butter...but nothing to put it, since my bread Ezekiel bread is 11 carbs. I love cabbage, brussel sprouts, squash, zuchinni...all veggies except for avacado, onions (allergy), and mushrooms...hate those three, not big on artichoke, everything else is fair game! Any suggestions? Also, off topic but should I start a new thread for this? I tend to get lost in my new topics...

I think the creamy probably isn't vegan...most cream based stuff has dairy or egg...but I am going to check them out tonight!!! Thanks again Rena!!! Any ideas I can use to build off of!!!

LOL it's okay Rena, I can imagine how hard it would be to remember for someone who doesn't eat that way, this plan is definitely challenging but I am going to prove this can work and hopefully can help other vegans get ideas on here if others come sometime, but first I gotta figure out a meal plan for me, for more than one day LOL
