Sides and Snacks / Re: Making some snacks with my new dehydrater

Great! Let me know it turns out. I also read they're good for making the flax crackers. Start the crackers in the oven and finish them in the dehydrated. It apparently keeps them from burning or overcooking on the edges. I've been loving the dehydrated spinach today.

The dehydrated spinach turned out good. Well tastes good but looks funky. I think I'll have to get used to that. Lol. At least I found a great way to use any spinach I have left over for the week!

What I read on the jerky is that salt is required to prevent bacteria growth but I saw a couple of recipes for fish jerky that seemed to have less salt. I read about dehydrating spinach leaves that looks awesome. I love some spinach! It said just toss with a little olive oil or coconut oil and dehydrate. I want to try that next! The jerky turned out good but I think I need to marinade a little longer next time. I used cayenne and chilli pepper too so didn't want it o be too spicy. It looks a little funky u tastes really good. And it's a decent size batch. Pretty cool

I'm making some beef jerky for the firs time ever and I can't wait to see how it turns out! Having some snacks to take to work or when I'm gone all day on the weekends will really help. But I'm wondering about other things to make. Maybe dehydrated zucchini 'chips'?

Acupuncture helps me with a number of things. I've gone every 2-3 weeks for 3 years. My migraines are under control and so are the symptoms of fibroids. I take a Chinese herbal supplement that's meant to balance hormones so my fibroids don't flare up (as I refer to it). And my migraines are also often caused by imbalance so my acupuncturist hits along the hormone and stress lines. She even fixed my ear ache last time! When Tori went on maternity leave I cried. She's had my patterns down for a long time and knows just what to do. I love, love, love acupuncture. It's kept me off the medication go round for three years. My doctors are amazed as I was about to have surgery and was seeing a neurologist for the migraines when I finally called a halt to the meds and doctors and went to alternatives. I still go regularly for all the check ups and tests but had a full turn around.

Oh geez this isn't a good day! Sick with fever and ToM day 1 on top of that. I'm starving! But can't eat much with feeling bad. So I've been grazing trying to control both. Grazing on low carb, my house is stripped of sugars. But I finally caved in to the sweet craving...no, the bran crisp just didn't cut it!! :) anyway I made a modified single serving cheesecake. I have these itty bitty baking dishes for single serving. I mixed some cream cheese, teeny tiny drop of vanilla extract, little egg white, 2drops liquid splenda. And baked. It was hard to figure out the ratio for single serving so worst case I get baked cream cheese. Lol. Probably not ideal to give in to a sweet craving this early in my transition to this plan but I'll be huddled on the floor, rocking, and begging for a Snickers if I don't mitigate soon. Hopefully tomorrow is a better day. I have acupuncture in the afternoon and that Always balances me out.

Holy cow! Since I last whined about not losing last week I lost at least 6 lbs! I'm not totally sure because I weighed after breakfast, 30 ounces of water and a cup of coffee. And after all that it was still 6 lbs! Maybe I'm a fits and starts loser. :)

I like the weighing option. It is hard to determine amount on those weird shaped items. Thanks for that suggestion!

Can I ask where the 6T of melted butter comes into the recipe? I didn't see it in the steps but then sometimes I miss the obvious.  :)

Zucchini and yellow squash. I had picked those because it said 1.5 net carb per 1/2 cup and I love them roasted.  I also eat broccoli and cauliflower, though not as much broc. And spinach every day. Are those not good choices or should I just mange portions better?  Those roasted veggies are too easy to eat!

Thanks! I'll go back to basics. I thought I was doing ok on the veggies but guess not. Ive kept them to asparagus, squash, spinach or cauliflower.

Doug you're so right about being sugar sensitive. I'm uber sugar sensitive. A friend was trying to get me to have just 1slice of pizza saying just the 1slice won't hurt anything. For her yes. For me it wold mean gaining 2 lbs immediately. :)
