Title: MommaB's Meatloaf

MommaB’s Meatloaf

2 pounds ground beef (0 carbs)
½ cup onion diced (7 carbs)
1T garlic powder (0 carbs)
1 ½ tsp onion powder (0 carbs)
½ cup Walden Farms barbeque sauce (0 carbs)
2 eggs (2 carbs)
1 bag plain pork rinds – mashed (0 carbs)
½ cup flax meal (0 carbs)

Combine all ingredients. Form into a loaf and place in the middle of a cookie sheet with sides so the grease doesn’t spill into the oven. Bake at 375 for 50 min. to 1 hr.   

9 carbs for whole recipe!

I serve this with caulimash and a nice green salad!!! Yummy!!!   :D

39 pounds ! MommaB you are doing great! I love meatloaf! I love meatloaf sandwichs the next day! Great recipe! ;)

And that recipe sounds delish! 8)

I'm going to try it as soon as it cools down around here.
Still too hot for oven and/or much stove top cooking.
I've been eating lots of salads and wraps the past few weeks. ;)

Thanks Umpa & Tony!!! You're very sweet!! 

I did find that the flax meal wasn't needed when using crushed pork rinds, so if you have the pork rinds use that, if not then the flax meal will work!! It was the perfect consistency with just the pork rinds and the family loooooved it!!!! Definitely a home run!!!  ::)

Improve this recipe by mixing up the meats, add spicy pork sausage BAM!
