Eggs Florentine

I made this for breakfast this morning and thought I would share the recipe with you.

Eggs Florentine

6 oz. bag of baby spinach or 4 cups of spinach
5 eggs (I use Egglands Best)
1/4 cup of parmesan cheese
garlic salt to taste
pepper to taste
3 tablespoons of margarine


In a skillet melt the margarine and put in your spinach and cook until wilted down.  In a bowl crack 5 eggs and wisk with parmesan cheese a smidge of garlic salt and a smidge of pepper.  Pour over the spinach and scramble over medium heat.  Enjoy!

I can't take all the credit, my sister gave me the idea.   She used to eat this alot when she was following FTS.  She lost 45 pounds and is now following weight watchers.

In social settings she was embarassed with groups of coworkers at restaurants ordering food that was without bread.  She has learned to cut back on her carb intake though and has lost 18 pounds with weight watchers so far.  She has a terrible sweet tooth though since she stopped eating FTS.  She just didn't like to attract attention to herself.  FTS really did help her alot though, if she had not read the book I gave her and started following it she was headed towards my weight and she is petite.  I am just glad she is losing instead of gaining.

Hi, skychant! :)

One challenge most everyone on FTS faces at one time or another is resistance from family and friends.
This is because they want to be "helpful", but simply don't understand.

If any of your sister's coworkers were to ask her why she does not eat breads and such,
all she need say is that it causes her blood sugar to spike which can bring on health problems.
That's usually enough to keep the skeptics quiet and supportive.

To get rid of that terrible sweet tooth, she'll need FTS.
