I found this recipe online (pinterest):
Cream Cheese Pancakes
2 oz cream cheese
2 eggs
1 packet stevia sweetener
1/2 teaspoon cinnamon (optional)
Put all ingredients in a blender or magic bullet. Blend until smooth. Let rest for 2 minutes so the bubbles can settle. Pour 1/4 of the batter into a hot pan greased with butter or pam spray. Cook for 2 minutes until golden, flip and cook 1 minute on the other side. Repeat with the rest of the batter. Serve with sugar free syrup (or any syrup of your choice) and fresh berries. A surprisingly satisfying substitute for the real thing. Tastes like skinny fried cheesecakes! Even if you aren't watching your carbs these are a delicious departure from the traditional doughy stack of pancakes. And you won't have the sleepy feeling that usually comes afterwards!
-
Sarah I'm gonna have to try this ;D ;D They look and sound delicious!!!!
-
This does sound just so delish!
Thanks Sarah!... It's on my "to make" list! ;D
-
BTW... That "sleepy" feeling is a symptom of a "sugar crash" after a glucose spike.
I've haven't felt one of those for quite some time now! ;)
God bless FTS! ;D ;D ;D
-
I gotta try this!!!! Will report back with pictures ;)
-
OK here's the report;
1st, don't try to mix in a stand mixer....use a blender or bullet as the recipe calls for...if not the cream cheese won't dissolve enough and it will be clumpy.
They tasted good and reminded Umpa and I of crepes. I doubled the recipe and I replaced the Stevia with 3 drops Zero (for double batch) I used cinnamon and it was a good idea. I used butter on my griddle. Next time I'll use Kraft Philadelphia brand 1/3rd less fat cream cheese to cut the carbs in half, here's the pic along side a wonderful Italian sausage.
-
Ok, I'm going to go make these right now for brunch. I'll have them with egg muffins. If they're not good, I'll let you know! Haha.
-
Aaaaa! I can't believe I ate the whole thing! Sooo good! The things one can make without flour always amazes me!
-
They were wicked good! Next time I will fill them like crepes with fruit and whip cream. ;)
-
I played with the recipe a little bit and cut back on the cream cheese a little and added 0 carb protein powder. They were good.
-
Did somebody say..."skinny little cheesecakes"?? ;D Oh my! I will be all over this recipe! ha ha Thanks for sharing! They look marvelous!!

Does have a nice ring to it doesn't it Maddysmom ;) ;D
-
Yes it DOES! :D :D :D
-
I was wondering when you were gonna find this maddysmom!!!!!! :D I keep checking! Doug made them and you would swear you are eating crepes! ;) You are gonna love them!
-
Yes, I have been running behind on the forum lately! I've been busy at the office, and in the evenings too. A lady in our community is having to stay with her mom who is having BOTH knees replaced. So.....Madison and I have taken on the care of her horses while she is gone. We are having a blast with them! ;D
-
I had my evening all planned out: Cream Cheese Pancakes for dinner because my husband had a business trip and I was going to get to have the WHOLE HOUSE TO MYSELF for an evening. His flight was cancelled so he's home. He knew enough to warn me that my ALONE time isn't going to happen.
I'm going to have those pancakes for dinner anyway!
Disclaimer: We have a great relationship but he works from a home office and I was a stay at home mom for many years and I rarely the house to myself anymore.
-
Fun with the horses, Jan?... Way cool!!! ;D ;D ;D
-
Tony, I LOVE horses! I haven't had one of my own since I was a teenager, but I do hope to have another one someday. ;) A new Tractor Supply Store had opened in town, and that's more fun than the mall! ha ha ;D
-
Yummy!! Gotta make these! Anyone know a recipe for low carb strawberry syrup or sauce? I was thinking I could perhaps just cook frozen strawberries on the stovetop with a bit of zero??
-
Your strawberry solution sounds like a good one. I had these for dinner last night. Easy, delicious, perfect.
-
Andrea that is the key to a great marriage, knowing when you need a breather. :) I don't think judges release women from murdering their husbands anymore because they were on their periods like in the good old days! :D
Jan you are so kind ;)
Kim I use waldenfarms because I can get it in my grocery store , but you can make your own strawberry sauce by boiling down strawberries(1 cup) with water(1/2 cup or less depending on how thick you want it.),zero and a pinch of xantham gum(1/4 teaspoon). This will work for blackberries too. ;)
-
thank you for the pancake recipe.
today i went to a new health food store and found
xylitol, black soy bean, and scandinavian crispbread.
for lunch i had meatballs smothered in cream of spinach and a little pesto delicious
enjoy your weekend
hope you do well
god bless millie

Tried the cream cheese pancakes for breakfast this morning, and the verdict is: Mommy likes!!!! ;D I made them with the cinnamon, used the sf pancake syrup, and added a side of sausage. I agree that they are more like crepes. Very light and tasty!! Thanks so much for sharing this recpie!! :)
-
I saw a recipe where you just use protein powder and enough water to make it "battery-ish" and then add whatever flavors to make pancakes. I haven't tried it yet.
-
I made these this morning. Fantastic! I tried them with sf maple syrup, and with sf raspberry syrup. Both were excellent.
-

I found this recipe online (pinterest):
Cream Cheese Pancakes
2 oz cream cheese - 2 carbs
2 eggs - 1.5 carbs
1 packet stevia sweetener
1/2 teaspoon cinnamon (optional)

Could be different carb count depending on products used (Neufchâtel). Read your labels for a more accurate count.

Hi Millie! :)
If you use a cast iron skillet, you must make sure that it's hot enough.
I test mine by wetting my hand under the faucet and putting a couple of drops of water in it.
If the water spatters and crackles, the pan is ready.
Just don't put in more than a couple of drops!
Otherwise, it could "explode" with hot oil and water!!! :o :o :o
Also, don't let the pan get too hot for the same reasons.
The easier way is to use a good non-stick pan.
I spray a little PAM just so make it extra slippery. ;)
-
they were a little hard for me to turn.
any suggestion.
thanks again millie :D :D :D :D
Millie, try spraying the spatula with non-stick spray before you try to turn the pancakes and maybe make smaller cakes so the spatula can support most of them when you scoop it up. Also, you might let them cook a few seconds longer so they're more 'done' before you turn them over. That's all I can think of. I'm going to make these when I get through here and have them with a sausage patty. Spicy sausage. Happy thoughts.
-
I got impatient and didn't let my griddle get hot enough so the first batch was hard to turn but the second worked fine. The moral of the story is that the cooking surface needs to be HOT.
-
Like Tony said"make the water dance on your griddle" Needs to be HOT! ;) Good Morning Andrea! How are you doing ?
-
I am doing great. I love spring and we are smack dab in the middle of it here in Colorado.

I had company for dinner tonight and decided to serve these Cream Cheese Pancakes as Dessert Crepes with Strawberries and Whipped Cream. You know how these can be touchy to flip as pancakes - well, I was worried about trying to flip thin crepes so I used a small 'omelet' pan to start with and poured in a little of the batter and swirled it around in the pan, then let it cook for a couple minutes. Then I took a large skillet sprayed with non-stick and flipped the little pan upside down and let the crepe fall into the big pan to cook the second side. Then while that was cooking, I put some butter in the first pan so it would be ready for the next crepe. By the time I got about finished, I figured out how to keep both pans going and working on two crepes at a time. I also used pumpkin pie spice and they had a slight nutmeg flavor.
I made the crepes ahead of time and when we wanted dessert all I had to do was spoon a couple strawberries on one, roll it up and top it with the whipped cream. I put a strawberry on top for garnish. I was going to sprinkle them with cinnamon, but forgot. My company was really impressed anyway. Like they thought it was really hard to make them!!! I made a very small one for myself because of the low-carb-a-thon.
Don't know if i already told you that I put the cream cheese in the microwave for 10 seconds to soften it up before it went into the Magic Bullet and it mixes up much better (faster).

That sounds grrrrrreeeeaaaatttt Sarah ;D ;D :o :o ;D ;D
-
You put on quite a show Sarah :)
-
I did it all ahead of time and just put it together when it went on the table. I was going to heat up the crepes, but didn't. They were fine. Took 5 seconds to finish them up.
-
I like the make ahead idea ;)
-
I cant wait to try this. Pancakes are my favorite breakfast food. Think I'll try it with the strawberry syrup idea.
-
hello its millie,
i found maple grove farms of vermont sugar free
pancake and waffle mix
carbs 8
fiber 3
sugar 0
should i be eating this product?
please advise.
-
5 carbs per serving is a little high. You can use the omm recipe and make pancakes any flavor you would like by adding extract or cocoa powder of a flavored syrup. The omm recipe is a 1.You can buy golden flaxseed at any grocery store or big lots. Its cheap and will keep you full all day. ;)
-
The carbs are high AND they aren't as good as the Cream Cheese Pancakes or the OMM pancakes.
-
Good Morning Andrea ;)
-
Good morning, Umpa. It's Friday and I only work 4 hours on Fridays so I'm a very happy woman at the moment. I helped move gravel from the driveway to the backyard last night and didn't even break a sweat. I LOVE FTS!
-
Isn't it amazing?? You are in great shape! At 47 I can run circles around my kids! :D How did the reunion go?
-
There are 17 surviving members of my husband's class of 20 and 14 were there for dinner on Friday night. We laughed about growing up in a small town where almost everyone is related to each other (my husband's reason for leaving the state and finding a bride elsewhere) and shared all of our getting older stories. I like going back to those roots better than my husband does and he appreciates that I'm willing to go with him so that makes it a win-win. Since his parents died a few years ago, we go back much less often. I think you need to decide what's important and work at it, so we do.
-
I agree 1000%! Doug and I are in that position, we have done what we have to in our lives, now we can do what we want to. We still work 7 days a week but its our choice.I am so glad you had a great time ;)
-
I love that I'm from a small town ;D I had 14 in my graduating class LOL What fun we had :D The only bad thing I could find with it was that the dating pool was pretty slim..... it would be like kissing your brother :-* HA!
Im glad you had a great time to Andrea ;)
-
I cannot seem to get this recipe to work for me. I've tried it 3 times. No matter how careful I am with turning the pancakes, they fall apart, then I just have globs of batter in the pan. On this last batch, I even tried adding a little almond flour thinking that would make them a little more sturdy and even that didn't work. >:( I just put them in a baking pan and try to bake what's left and see what happens.
-
Well, this one is a fail for me. After baking, it came out sort of about the thickness of a real pancake, but I didn't much like the flavor. Dang!
-
itsoversugar,
If you are really craving a Bisquik type pancake, you can try using Carbquik. I get it from netrition. The other option would be look at the pancake variations with the one minute muffin recipe. If you go to the recipe section of the forum and search on pancake, you'll find quite a few options.
Good luck.
-
Hi Itsoversugar! :)
I'm assuming that you followed the recipe to the letter...
Given that, make sure your pan is hot enough BEFORE adding the "batter".
Even "regular" pancake batter will turn out funky cooked on a warm pan.
I like to use peanut oil.
Simply add it to the pan, heat pan on med-high heat until a drop of water will dance in it.
Then you're ready to go.
After the pan gets hot enough, you can really crank these gems out. ;)

These are by far our favorite pancakes; http://www.fattoskinny.net/index.php?topic=4441.0 (http://www.fattoskinny.net/index.php?topic=4441.0)

These look good. I'll have to try them next time I'm in the mood for pancakes. Cool!
-
These are more like crepes and UBER GOOD!Have strawberries and whipped cream ready! ;)
-
This post reminds me of Sarah. Did she give up on us?
-
I sent her a message but never heard back. :(
-
New to low-carb, and new to this forum. This is the first recipe I am trying. Will let you know how it goes. My biggest challenge has been getting the rest of the family to buy in. Now I am cooking separate meals for me and them.
-
Welcome to the FTS family mdanziger!! :) These pancakes are really good but I also love the pancakes made out of flax using the one minute muffin recipe.
I know the challenge you have all to well. We eat differently in my house too. Only because I am the cook, for the most part it is FTS friendly ;D ;D I figure if I don't buy it or cook it.....it isn't going on the table haha The hubs gets his carby stuff when we eat out or I might throw a carby side on his plate occasionally. If you look around there is pretty much a replacement for everything though. One thing I have noticed is if you don't tell them it is FTS friendly most of the time they wont know ;) Somehow most folks will decide they wont like something before even tasting it.....silly I know :-\
If you have any questions by all means please ask... we are a big family and are all here to help each other. Don't forget to check out the recipe section...lots of good stuff in there. Again welcome, come back and post often :)
-
welcome mdanziger! i agree with toosweet :) Just put the food on the table. There is no such thing as diet food here its a lifestyle change. And the food is amazing! I am Umpa,Dougs wife. I have a column on the homepage called ask umpa where I can convert any recipe to fat to skinny friendly. You are gonna do great and we are gonna help you ;)
-
Welcome to the FTS family, mdanziger!!! :) :) :) :) :) :)
When I first started FTS, I started cooking two different ways. One for me and one for my wife.
It was challenging.
Especially since there were high carb things in the pantry and frig for my wife that were tempting.
So one day I decided to cook only FTS-style.
My wife quickly came to LOVE it! ;D
We then cleared the house of those high carb items.
If I did it, you can do this too! :)

Hi friends : ) I made these last night and I didn't care too much for them . I plan on trying the omm kind : )
-
First, thanks for the very warm welcome. One of the things I have found lacking with other weight loss (http://www.fattoskinny.com/) programs I have tried has been the support. This community certainly seems to offer lots of it. I tried the cream cheese pancakes this morning. I put a little cottage cheese on top and rolled them like a crepe. Yum...
I can't wait to try the OMM pancakes, and so many more recipes.
-
Hi friends : ) I made these last night and I didn't care too much for them . I plan on trying the omm kind : )
Stephanie when you do the OMM if you like the taste of french toast....Just give this a try. This one is my favorite :)
1 Tbs butter melted
1 egg
1/4 cup golden flax meal (you can use regular flax meal but I think golden is way better :) )
2 Tbs heavy whipping cream
1/2 tsp baking powder
1 tsp vanilla
1/2 tsp cinnamon
3 drops FAT TO SKINNY ZERO sweetener or 1 Tbs Xylitol
Mix it all up and spread out (it will be a tad thick) on a hot griddle or put in a waffle iron.... with butter on top and warm sugar free syrup and bacon on the side Yumm!
Oh...... I know what I'm having for breakfast in the morning ;D ;D ;D
-
I've had great success making the cream cheese pancakes and really like them topped with berries. Next I plan on making them without the sweetener and filling them with a creamed seafood and spinach mix. I'll let you know how they turn out.
-
Thanks toosweet I love French toast I will try that!
-
Stef they should taste like crepes. The require a hot pan to cook correctly ;) Sarah that would be awesome!
-
I have never had crepes so I didn't know what to expect but in any case they weren't for me, no biggie lol I will move on to the next recipe : )
-
Welcome, mdanziger and good to hear from you, Sarah.
I like these pancakes but they require PATIENCE and that's not a word I associate with food. You need to let the tiny bubbles escape from the batter after you blend it and you need to have the griddle HOT.
I don't tell people something is low carb unless it has sugar alcohols in it. That's much less of an issue since Doug and Umpa made FTS Zero an issue but I don't think it's a good thing to feed xylitol to an unsuspecting crowd.
