Title: Low Carb Pizza Pie

This is an easy, filling and very low carb pizza pie. I also like this recipe for breakfast  8)

Low Carb Pizza Pie

Ingredients

6 large eggs well beaten
2 1/2 cups shredded mozzarella cheese
sliced pepperoni
chopped black olives
2 tablespoons olive oil
salt and pepper to taste

Directions

1- Preheat your oven to 350 degrees
2- Mix 1/2 of the cheese into the beaten eggs, add a bit of salt and pepper
3- Heat the oil over medium high heat in a 10 inch oven proof skillet (I like cast iron)
4- Once the oil is hot pour in the egg cheese mixture
5- Sprinkle the remaining cheese over the top of the egg
6- Place the pepperoni over the top of the cheese
7- Sprinkle black olive over the top
8- Place the skillet into the oven and bake until the egg completely firms up when pressed in the center, (about 20 minutes)

Lately, I've been thinking about making pepperoni pizza. ::)

I made this today for breakfast, and LOVED it!
This is a wonderful way to take care of a "pizza urge" without much fuss in the kitchen.

BTW, more toppings could be added like Italian sausage, green peppers, chicken, etc..
I intend to try some "topping experimentation" in the future! ;)

I made this last night with a few variations on the recipe;

1) I added 1/2 TBSP Italian seasoning to the eggs while whisking them.
2) Baked at 375 for 15 minutes.
3) Then, added some fresh ground Parmesan cheese to the top.
4) And finally, put under the broiler for 3-4 minutes (until cheese topping started to brown).

Two words... WOW!!!... & YUMMY!!!
