I really enjoyed this recipe and with squash season coming we'll be eating lots of Zucchini. Give this a try for brunch...it's sure to please!
Low Carb Cheesy Zucchini Cakes n' Bacon

Ingredients
6 eggs
2 cups shredded Zucchini
1 1/2 cup shredded creamy Havarti cheese
bacon
fresh parsley
butter
salt and pepper to taste
Directions
1- Cook your bacon crisp and set aside
2- While your bacon is cooking make your batter by beating the eggs well and adding the shredded zucchini and 1 cup of shredded cheese.
3- Wipe out your skillet and add a tablespoon of butter.
4- ladle out cakes and cook till golden brown on one side.
5- Flip the cakes and sprinkle shredded Havarti over the top...cover for 2 minutes.
6- Plate and serve with fresh parsley...salt and pepper to taste.
