Tuna Stuffed Pepper

     Slice off the top of one pepper, removing the stem and seeds.  Combine one can (5 oz.) of albacore tuna in water, drained, with 1 Tbsp. of Duke's mayo.  Put mixture into pepper.  Sprinkle top with some parmesan cheese.  Put pepper in pan sprayed with Pam and bake at 375 until softened, about 25 minutes.

I love tuna, sounds good.  Tonight I am going to try to make the salmon patties, wish me luck as I am not a 'martha' haha
I use to love tuna casserole too, thinking maybe we could make the broccoli with the alfredo cheese sauce and add tuna to it, cover with shreaded cheddar  and bake it like I did the chicken the other night sounds, yum to me.
I placed my first order for low carb on line yesterday and ordered the carbquick, somekind of pasta that is lowcarb and some of the low carb muffin mix.

I did make the salmon patties tonight and hubby loved them. I used the pig skins added some egg and some spice...fried them in olive oil. ;D

somekind of pasta  this has me concerned k faith, can you elaborate on what you ordered?

Oh NO!  Doug, I went back to see what I had ordered when you said that.  I guess I had it in my mind everything from Netrition was healthy, so I saw this angel hair pasta and it said 5g. carbs, I just went back found it and found the label, oh my goodness.... it has 36 net carbs, here I thought it was going to have 5 carbs ( a  dream come true) booohooo, no such luck. But nope the 5 g. was digestiable carbs, whatever that means, I have no clue.  But yes, it sure fooled me, I will give it away when it comes. ;(  Been missing pasta so bad and nothing I have tried seems to replace that desire.

My Netrition order came today. You are not going to believe this, both boxes of the angel hair dreamfields pasta were open in the box and spilled out, after I had found out I was not allowed them, I had planned to give them away, but since they were opened I called Netrition and they refunded the money to my account and I threw the pasta away.  I had no clue what digestiable  carbs meant,still not sure, that was a new one for me, so glad you questioned me on that Doug and I took a closer look, as net carbs were 36.
Looking forward to trying Carbquik bake mix and the carb counters corn muffin mix. Hopefully those are allowed?

Hi Rosie! :)

The way to figure net carbs are easy to remember.
Net carbs (the sugar) are what's left after you remove fiber and sugar alcohols.

Net Carbs  =  Total carbs  -  Fiber (if any)  -  Sugar Alcohols (if any)

Since the FDA is not very strict about carb info on Nutrition Facts labels, also remember to check the ingredients.
If any of the first three are high in carbs, don't buy the product.
What you do today is what matters!

KFaith, trust me, you really will lose your desire for wheat based pasta after you start eating spaghetti squash, or julianned zucchini or Shirataki noodles. What will happen is you'll put a piece of regular pasta in your mouth 6 months from now without sauce and it will taste like glue :o

The flavor is in the sauce not the pasta and the alternatives mentioned above are wonderful replacements.

I had forgotten about julienned zucchini.  I have been craving pasta too.  I think the zucchini works great with a good low carb sauce.  Thanks foe the reminder Doug. ;)
