Sherri and I had a craving for southwestern yesterday so we made our Oooey Gooey Delicious Low Carb Burritos. These are soooooo good you'll want another one for breakfast the next day. Serve with a peppery Avocado side salad and you'll swear your in heaven!


Oooey Gooey Delicious Low Carb Burrito



Ingredients

1 LaTortilla high fiber low carb Tortilla
3/4 cup ground beef
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon cajun seasoning
3/4 teaspoon Italian seasoning
1/2 cup shredded cheddar cheese
2 tablespoons salsa

Directions

1- Preheat your oven to 350 degrees
2- Saute the ground beef with all the seasonings till cooked through, taste for seasoning adjustment it should have a strong flavor.
3- Using a slotted spoon to strain extra liquid place the mixture into your tortilla and roll up, place the roll into an individual baking dish
4- Spread the salsa on top of the burrito and cover it with the shredded cheese.
5- Bake in the oven until the cheese is completely melted...about 7 minutes.
6- Spoon the sour cream over the top and serve with Peppery Avocado Salad



Peppery Avocado Salad



Ingredients

1/2 Florida Avocado sliced and layered on plate
1 teaspoon lime or lemon juice
fresh cracked black pepper
sea salt
2 tablespoons sour cream

Directions

1- Paint the citrus juice over the Avocado
2- Salt and pepper to taste
3- Garnish with sour cream

As a lighter alternative, I made this using cut up precooked chicken breasts and shrimp!
So YUMMY!!! ;D ;D ;D ;D
