Title: Cauliflower Pizza

1 cup cooked, riced cauliflower
1 egg
1 cup mozzarella cheese
1/2tsp fennel
1 tsp oregano
2 tsp parsley



Preheat oven to 450 degrees Fahrenheit.

Spray a cookie sheet with nonstick spray.

In a medium bowl, combine cauliflower, egg and mozzarella & seasonings . Press evenly and thin but with no holes on the pan. Bake at 450 degrees for 12-15 minutes (15-20 minutes if you double the recipe).

Remove the pan from the oven. To the crust, add sauce, then toppings and cheese. Then place back in until toppins are hot and cheese is melted .

 The crust is 8 carbs then add all your carbs for the toppins and sauce you use . I put to many toppings on mine so mine was 3 carbs per slice I got 8 pieces .

I wish I could say I thought of this but found on a low carb recipe site a while back  .

I used frozen cooked it in  the microwave then riced it .

Thanks, another question... by "ricing it", did you put it in a food processor and just not put it in as long as you would for mashed cauli-tatoes?

Yes I put the  attachment on the shredded side for the  processer I have if you dont have that I guess grade it with the big holes on a grader . Owensmath make sure you press it thin or it will be soft on the bottom side if it is to thick . It still taste good you just have to eat with a fork .

Which it doesnt matter to me it still taste like pizza ,also if you want breadsticks when the crust is done you can cut into sticks and just put cheese on them and to oven to broil till cheese melts ,get some dipping sauce .

I think Cali girl posted this a while back.She also made crackers.I think its in vegetarian recipes.I made it and I liked it.If I had to make it again i would use a pizza pan with holes so the water could escape. ;)

Umpa I bet that would make the bottom more crisp too . I will have to get one and try that I do like the taste of it though .

This pizza is so good.  I am having a hard time waiting for the crust to cool and stiffen.  I made mine a 3 meat pizza. AWESOME!

Can this be made ahead and then froze? or at least sit for a few days in the fridge? I am having surgery next Friday on my right hand and I am right handed. So I need to make things ahead of time to get through the first few weeks. Or at least on till I can use my hand again.

Thank you ShihTzuMom1,  I will check it out. And thank you the surgery is a carpal tunnel surgery so nothing to major. I said Friday not thinking that it was Thursday, however the surgery is nest Friday the 11th.

I would say no. But I think Romarc froze the cauli mashed potatoes and they froze well. ;)

I freeze individual servings of cauli mash and turnip casserole.  Both are fine.

Hi Phil! :)

Be careful not to overcook the cauliflower. It will get soggy. :-\
Usually steaming moderate sized flowerets for 4 to 5 minutes max will make it just right.
You want it to be al dente (i.e. cooked but with some crunch to it).

Also be sure that the cauliflower is drained well.
After cooking, I usually put it in a strainer for a minute. Then transfer to a couple paper towels on a plate and wait a couple more minutes.

But if you goof and cook it too long (I'm guilty of this), egg will help it hold together better.
Adding one will help.

OK I made it with two eggs cooked the cauliflower for a couple min. in the microwave strained all the water out put it in the ninja and the rest is history. The pizza came out so good it was fantastic. I went upstairs to get my camera, when I came back there wasn't enough to take a picture of.  ::)
