wow that does sound good . When I cook wings in the oven the grease popping makes my oven smoke does this not happen to yall ? ???

That has happened to me too, Jo. :-\
It's the fat in the skins.

You could take Binky's advice and grill them.

Or, to minimize the smoke, lightly season them and put them on a cooling rack that's in a covered baking pan.
Pre-bake them for about 20-25 minutes at 400 until most of the fat has melted off.

Let them cool off and then coat them with sauce, cheese, etc..
Put them back in the oven (in another pan) at 400 uncovered for another 15-20 minutes until done.

BTW, save the rendered fat and keep it in the fridge.
Makes a nice substitute for bacon grease if you want a lighter flavor.
If you want to do this, season them AFTER the first round of baking.

P.S. Cook times may vary a bit as ovens don't all operate the same.
What you do today is what matters!

That's a good idea Tony.    I just line my pan with tin foil and put a tin foil tent over the top for the first portion of cooking.  When done (or just about) change the bottom out, roll in cheese/ garlic, leave the top off, and cook until crispy ;)  Tony is right... most of the fat is gone with the first round.

I usually bake/grill about 8 at a time.  I eat one or two and my husband eats the rest.

Hi Jo! :)

Electricity is expensive around here.
Having an electric stove and oven, when I cook, I cook large batches.

Since it costs just as much to bake one serving, it's not unusual for me to fill a large baking pan with wings.

If you try this, just be sure the baking rack is tall enough so that the wings don't get immersed in their own fat.
If they do, your baking pan will become an oven deep fryer and could catch fire when you move it! :o
