OK, I am back...for real

I bought the book 2 years ago, and read it 4 times, but just couldn't get my head in the game. I was so busy trying to learn how to be a home school mom, and still work. Then last year I got married to my guy of 8 years, and really had "intentions" of doing FTS before the wedding, but it never happened. So here we are in 2013, and now I am finally ready. I guess it takes me a long time to commit  ::) And my husband, who has never done any kind of food change/ diet, is doing it with me. Of course he only has maybe 15 lbs to lose where as I have about 80  :-[ We started 4 days ago, He has already lost 9lbs, and I have lost 5. And I feel better, I have even been working out! This a totally new way of cooking for me, and I have had carb/sugar withdrawl, but Im in! ...Also have to say, I made Dougs pork chops and cauli mash tonight, my 7 yr old was grubbin it down! That was sooooo good! Better make more next time, because there were no left overs ;D

Hello soulcanvas, welcome to our forum family. I'm so glad you held onto your book and are finally with the program. Don't worry about that 75 pounds you have left to lose. If you stick with us it WILL melt off :)

And, it's wonderful that you're feeding your child FTS friendly meals.
I believe obesity as adults can be avoided if we learn to love low carb eating as kids.

Thanks everyone! This is a totally new way of cooking for me so I am glad that there are tons of recipes on the forum. Tried the chicken marinara tonight, didnt have noodles but it was yummy with out it. Tomorrow we are going to try our hand at the cauliflower pizza.  ;D
I do have one question though....I really want to make a cheese cake this weekend, and I'd love to put something other than strawberries or blueberries. Any suggestions? Also, I make a wonderful Brazilian black bean stew, that typically we eat with rice and Kale. I dont mind chucking the rice, and kale is good for us, but what of the black beans?  :-\

Hi soulcanvas - I usually make a ganache chocolate 'frosting/icing/sauce' over mine.  You can make it with any sugarfree chocolate.

I put about 30 grams in a cup with about 40 mls of cream, pop in microwave for about 20 seconds and give a good stir till smooth consistency.  If you need to put back in microwave do it in short bursts.  Pour over cheesecake and let set.  If you use more cream it makes it more runny - more choc makes it firmer, this is the consistency that I like.  Also good for over cakes, cupcakes, pancakes.  Lets face it chocolate 'sauce' good on anything  :)

I use Eden Foods Black Soy Beans (130g = 1 carb) for when I make my chilli.  Might work for your stew too.
