Umpas Red Velvet Cake

Umpas Red Velvet Cake

Ingredients

Cake:
¾ cup xylitol or 36 drops FAT TO SKINNY Zero Sweetener
¼ cup butter, at room temperature
2 eggs
2 tablespoons unsweetened cocoa powder
50 drops red food coloring
3 cups unblanched almond  flour
1 teaspoon salt
¾  cup almond milk
1 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon baking soda
1 tablespoon vinegar


Icing:
1 (8-ounce) package cream cheese
¼ cup butter , softened
¼ xylitol or 12 drops FAT TO SKINNY Zero Sweetener
1/2 cup shredded unsweetened coconut (this can also be toasted for more texture and richer flavor)
1/4 cup chopped pecans
2 tablespoons vanilla extract

Directions

 Preheat oven to 350 degrees F.

1- In a mixing bowl, cream the sweetener and butter, beat until light and fluffy.
 
2- Add the eggs one at a time and mix well after each addition.
3- Add cocoa to mixing bowl and blend.
4- In a separate bowl mix together flour and salt.
5- Add flour mixture to the creamed mixture alternately with almond milk.
6- Blend in vanilla.
7- In a small bowl, combine baking soda and vinegar and add to mixture, blend in.
8- Add food coloring and mix well
9- Pour batter into 2 (8-inch) round greased pans(or cupcakes)
10- Bake for  25 -30 minutes, or until a toothpick inserted into the center comes out clean. Remove from heat and cool completely before frosting.

Icing Directions:


 1- Blend cream cheese and butter together in a mixing bowl.
 2- Add vanilla and sweetener and blend. Fold in coconut and nuts.
3- Spread between layers and on top and sides of cooled cake.
Tip-Nuts and coconut can be omitted to lower carb count

Grandson actually preferred this over the dutch chocolate cake that was next to it.Very light.This was a conversion I did for FTS Awesome.I think it would make great cupcakes too :) And you are welcome

Well my order came in and I made the cake today hubby & tyler liked it . I thought it was very good !!!!!!   I dont think I put enough red color in it ,but it taste good .  I left the coconut off and made it 12 servings at 3 carbs each .
 I actually made myself a little sick tasting the icing . I can never get cream cheese icing to taste lik the kind you buy Tyler says it always taste like cream cheese with sweeetner in it . But anyway it is good maybe to good , I think this is my last desert for a while . . Thanks Umpa

... I can never get cream cheese icing to taste lik the kind you buy Tyler says it always taste like cream cheese with sweeetner in it . But anyway it is good maybe to good , I think this is my last desert for a while . . Thanks Umpa

Hi Jo! :)

Try using xylitol that's been melted in a just little water on the stove or in the microwave.

I found xylitol has the least "sweetener taste" among all the sweeteners I've tried.
It sure seems to fool my wife's friends! ::)
What you do today is what matters!

I used xylitol but I did not melt it in water first , I will try that next time I make something sweet . I am done with sweets for  awhile .

The Bakery was written to prove there is a substitute for everything! And that you can bake from scratch without expensive mixes!The next cookbook is gonna be even better! But enjoy the sweets as treats.Spend your carbs like you spend your money ;D

My part of it is meals from around the world! Pick a letter of the alphabet and pick a country! Of course there will be desserts too!
We are also writing the Fat to Skinny Cookbook 2.All new recipes ! ;)

I think I am going to try this one to take to my son's wedding this weekend  :D  We just finished baking and frosting the wedding cake ......whew!!!  What a job that is!!  LOL  I think all that sugar soaked into my skin!!  :o  It would be nice to have something there that I can enjoy and not be sick after   :P  Thanks Umpa I'll let you know how it turns out  ;)
