I made this recipe yesterday without the frosting. The cupcakes are amazing! I used Xylitol to sweeten. We had to taste them before using them of course ;) .  Going to use a cream cheese recipe to frost them because my brother is highly allergic to coconut.
I'm taking half the cupcakes to my brother's tonight. He's having a birthday BBQ for me.
Tomorrow is my actual birthday & my older daughter taking Mary & I to the beach. I'm bringing cupcakes for that too.

Thanks! My dad took us out to eat for my birthday. Daughter & I ate grilled cod & vegetables! Zucchini, spinach, yellow squash, onions & red bell pepper. Was so delicious!
Here is Mary & i before we went out to eat. I even curled my hair, lol.

Umpa...I'm going to give your cake a try soon...some questions, I don't have xylitol, I have erythritol and EZ-Sweetz...will either of those work? Also, what was the carb count for the cake and count for icing? And I HATE cream cheese...always makes me sick, but I'm going to try your recipe with the nuts and coconut added and hopefully that will work for me :) SO excited for this recipe soon ;)

Taby either one will work.The carb count for my recipe is on the recipe but if you change it you have to adjust the carbs :)
